Hi friends! Today I’m kicking things off bright and early, as Scott and I head out to the airport. My original flight scheduled to depart at 11:20 a.m. got cancelled due to weather, so I am now rescheduled for a 7:35 a.m. flight without a seat assignment or ability to check-in online. Awesome.
I guess I have to be thankful that I even got a flight out at this point. It’s been raining so much the past couple of days in our area that there are several floods, and the main highway is closed!
Our normal hour long trip should be interesting, and we are planning an extra hour to get there. Hopefully everything goes smoothly and the next time I check in with you guys it will be from a layover in Dallas.
Let’s go ahead and get straight to it. Below you will find an entire day of eats for What I Ate Wednesday!
What I Ate
I started my Tuesday with half a cup of coffee and a trip to the vets.
Cali was due for her two week check up after being diagnosed with a bladder infection and certainly was a trooper through it all. Thank goodness for sinks!
Apparently they are comforting to both her and Aspen when they get into an examination room.
She is about ninety percent back to normal, so she got another injection of medicine and should be back to good in no time!
Breakfast came shortly after we returned home, and I had a serious craving for turkey bacon. Couldn’t tell you why.
I happily heated up three slices, scrambled egg whites with cheddar cheese, and finished off my plate with a few slices of fresh mango. Coffee was also and obviously included here.
I wasn’t too hungry for a snack, but grabbed a small bowl of berries to hold me over anyways while I sorted through piles of clean but unfolded laundry (classic move) and packed.
I caught up on some emails for a while, took Roadie for a walk, and searched for our address book to send something out for at least thirty minutes.
I’m convinced that one of the pets ate it because it is absolutely nowhere. Good thing I’ve been slacking on Christmas Cards, because after unexpectedly getting a new phone earlier this year, I barely have anyone’s home address on hand. Whoops.
Eventually, I got hungry for lunch and made myself the definition of a monster salad, Southwest style.
Spring mix, cucumbers, carrots, tomatoes, green peppers, red peppers, black beans, garbanzo beans, corn, ground pepper and salsa for dressing.
I also enjoyed a serving of blue corn chips dipped into the parts loaded with salsa. It was extremely filling!
A couple of hours later, I noticed a break in the rain (finally!) and acted quickly by grabbing Roadie and setting out for a run on the trails. All was going well until we actually got there. It took all of ten seconds (literally) for Roadie to get into a patch of stickers. He would do that.
Luckily, I was able to pick them off quickly and move right along.
I wanted to stop by an overlook since I have been all about those lately. Trails really are my happy place these days.
It was pretty! But I couldn’t get over the muddy water… must be the rain.
We got all the way to our turn off of the trails before it started raining again. I guess it wasn’t the best run ever, but we still trucked through it and made it back home after four miles.
After a shower, I was ready for dinner and threw something even more filling than lunch together.
While I was cooking, I couldn’t wait and dove into my current go-to snack of pretzel crisps and hummus.
Twenty minutes later, dinner was served!
Gluten free spaghetti under Amy’s spicy chili with corn and navy beans topped in Parmesan.
I know… another Amy’s soup. I swear they aren’t paying me for the shout outs, or even providing me products for that matter! I’m just that obsessed.
I think my eyes were bigger than my stomach on this one, because I was already full half way in. Thinking I would only eat half of it, I ended up eating it all instead and questioned why I do that to myself. I have a problem leaving things on my plate had a pretty epic stomach ache as a result. I almost always finish my meals at home, but never have an issue saving leftovers at a restaurant. It’s the craziest thing.
I rounded out my evening with a tall glass of dark chocolate almond milk while I put most of this post together and called it a night.
