It’s nice to be the person who brings the healthy, yet incredibly delicious and addicting party dish to a get together, right?
I was asked to bring a fruit salad to a barbecue over the weekend, so I spiced things up by bringing a summery fruit dip with fresh fruit and crackers to accompany it.
While most pineapple dips call for cream cheese, this one leaves that behind so you don’t have to feel guilty about double dipping in your bathing suit. The combination of pineapple and coconut is one of my all-time favorites for the summer, and it tastes just as good in a dip as it does in a frozen drink!
This light and easy dip only takes a few minutes to whip up, and is sure to please any crowd!
1 fresh (whole) pineapple
1/2 cup shredded coconut
1 cup plain Greek yogurt
1/3 cup brown sugar
1/4 tsp. cinnamon (or to taste) (optional)
1. Using a long, sharp knife, cut the pineapple in half (length-wise), leaving the leafy stem. You can get fancy and use this as the serving dish for the dip!
2. Cut around the inside of the pineapple, from the rind all the way around. Take out the core, and remove the meat of the pineapple with a spoon.
3. Shred the meat of the pineapple by finely dicing, and drain out most of the juice. Set aside.
4. Mix the yogurt, coconut, brown sugar, and cinnamon in a medium sized bowl. Add pineapple and stir well. Pour the dip into the emptied pineapple half or store in refrigerator until ready to use. It tastes the best if it’s used the same day!
Next time you’re asked to bring a fruit salad, why not bring the whole rainbow and then some?
Pair the dip with a spread of fresh fruit and crackers. You can place it in the center, or use half of the leftover pineapple for a fun and unique presentation!
