Good morning! I hope you all had a great weekend.
The highlight of mine was in the form of this spicy almond and popcorn trail mix. True story.
While Scott was out of town, I took advantage of the extra downtime at home and got so. much. done. It was fabulous!
The house is clean, receipts are filed, holiday cards are ordered, emails are dwindled down, and quality time has been spent with the fur kids while watching a handful of Christmas movies. Yes, handful. All in all, I’d say my weekend was golden.
Since the majority of my last few days were spent inside, I’m going to skip the usual recap this week and dive right into something a lot more exciting… like this recipe!
Today I am teaming up with Blue Diamond Almonds to showcase a healthy snack to munch on while tailgating or watching your favorite football team. It’s time to ditch the chips, y’all.
6 cups popped popcorn (I used SkinnyPop – YUM!)
2 cups mini bagel chips (I used Stacy’s)
1 cup sesame sticks
1/4 tsp. onion powder (optional)
1/4 tsp. garlic powder (optional)
In a large bowl, combine popcorn, almonds, bagel chips, and sesame sticks. Sprinkle in seasonings (if desired), and toss well to coat and serve. This recipe makes about 12 servings!
I chose to use my favorite pre-popped popcorn so that this mix would last longer. After all, we weren’t having people over this time. If that were the case, however, I just might pop the popcorn and flavor it myself with non-stick butter spray and seasonings.
I’m not the biggest fan of wasabi, but these wasabi almonds are a whole different story. I love the zesty combination of wasabi and soy sauce in the almonds mixed with the popcorn, sesame, and bagel chips. I could seriously eat it all day long. But I won’t (yet).
I was also sent a can of Blue Diamond Smokehouse Almonds for this project, but I left them out of this specific recipe.
