This black bean and vegetable soup is vegetarian and vegan-friendly with a Mexican flare. It’s chunky and loaded with healthy ingredients. Enjoy as a liquid base or thicken it up with instructions here!
Just in case you forgot, I am a HUGE fan of hearty soup bowls, and this is especially true right in the heart of fall. I think I get excited that it’s cooling off, and the realness that winter is just around the corner hasn’t really set in yet.
I start baking more, using the oven more (it’s just too hot during the summer months in our apartment), and making allllll the soup recipes. Anyone else?
I could seriously try and enjoy a new soup recipe every week during the colder months and be very happy. And if you’re looking for an easy way to make sure your family is getting more vegetables in their diet, a hearty, veggie-loaded soup might be the way to go!
This recipe is very adaptable, and you can enjoy as is, throw in an extra protein, and spice it up with chili or jalapeño peppers. You could get fancy and add a bay leaf if you have one around, and you could also vary the taste with different flavored diced tomatoes.
This recipe as pictured is liquid-y with chunky vegetables, but you could put a portion of it in a blender and then add it back to the pot during the simmer if you prefer a thicker and more even consistency. Add salt and pepper as needed, and feel free to add more lime juice, too.
I made this last night and finished off another bowl and a half (with all the toppings) for lunch today, and it was better the second time around. I think adding an extra few squeezes of lime juice to my individual soup bowl added the solid punch of flavor I was looking for!
Give it a Mexican flare by topping it with (optional) shredded cheese, cilantro, sour cream, avocado, and tortilla chips!
