Happy Memorial Day! Who needs breakfast to feed the whole family home and off from work and/or school today?
Something close to a breakfast casserole would do the trick.
Similar to casseroles, an egg frittata can be just as easy to throw together… no Bisquick or flour necessary. An egg fri-whatta?
Frittata is just a fancy word for an open faced omelet. They are popular in breakfast restaurants, but easy enough to make at home.
Let’s not waste any more time… I hear those tummies rumbling!
Chicken Sausage and Veggie Frittata
Ingredients
5 Sausage Links (I used Al Fresco Chicken Sausage)
1 red pepper
1 green pepper
1/4 cup finely chopped onions
1/2 cup chopped tomatoes
1 tbsp butter
4 eggs, or 1 cup liquid eggbeaters
1 cup shredded Cheddar cheese
1/2 cup shredded Parmesan Cheese
1/4 cup water
1/2 tsp oregano
1/2 tsp black pepper

cook time: 25 minutes
Directions
Start by selecting which vegetables you would like to have in the frittata. I’ve seen broccoli, spinach, mushrooms and even asparagus added to recipes, but my favorite vegetables to mix with eggs are peppers, tomatoes and onions.
Chop all of the vegetables, then set aside.
Prepare the sausage in a small non-stick skillet.
I used Al Fresco Country Style Chicken Sausage, but you could stick to regular sausage or even substitute bacon, turkey bacon, ham and so on.
Flip sausage and remove from heat once they are lightly browned.
Cut into small, bite size pieces.
In a large skillet, saute vegetables in butter until tender.
Remove from heat and set aside.
In a mixing bowl, combine eggs (or liquid eggbeaters), water, oregano, pepper and garlic salt.
*Note: The original recipe called for garlic powder instead of salt. Instead of using 1/4 tsp garlic powder, I used what I had at home and substituted 1 tsp garlic salt.
I chose not to use the full tsp measurement, but the real ratio is 4 to 1.
Beat together until frothy.
Stir in sausage, cheese and vegetable mixture.
Pour into a greased shallow 1 1/2 quart baking dish. I had a hard time finding this size, so used a 8 x 8 x 2 cooking dish.
*Note: For best results, use a thinner, shallower pan than mine. Frittatas are often cooked in shallow circular pans and cut into triangle (pizza like) slices.
Bake at 350 degrees for 25 minutes or until fully cooked through the center.
*Note: The deeper the pan, the more your cook time will vary.
