I have just a few of the chocolate chip banana muffins I made this weekend left to enjoy this morning. Yes, they taste just as good as you think they do, and we will get to the recipe in a minute.
Jewelry Party: Round 2
I hosted another Jewelry Party on Saturday. Just to be clear, that is two parties, two weeks in a row. I guess you could say that I am a fan of Stella & Dot accessories!
I have a good amount of time to choose a few pieces from my hosting credits, but I need to start narrowing my list down to the must-haves.
I would like everything pictured above as well as a few rings, and I have my heart set on the Waverly Threeway cross-body bag, too. It runs more on the expensive side, but you can wear it several different ways, including a clutch without the strap.
When you look at it that way, it is really a three-for-one that I have decided I need to invest in. The good news is I have almost that much in credit towards it, or I can save that for other pieces and get it at half-off. Either way, hosting two parties was the only shot I had at buying it, and I am so glad I agreed.
Somehow, the majority of us there coordinated colors.
We all enjoyed getting dressed up (again) in pretty pieces, and it was fun to have some girl time while Scott was away.
Hosting parties always gives me an opportunity to try out ideas from my Pinterest boards. Last time I made Rainbow Fruit Kabobs and a Creative Vegetable Tray, and this time I gave a new pin a try.
Sandwich Skewers
Introducing the sandwich skewer, sans the bread.
You can use deli turkey, ham, chicken, or just about any meat you please.
I stuck with turkey and paired it with a slice of provolone cheese, two slices of cucumber, one red tomato, one yellow tomato and a black olive on each.
Looking back, I should have served them with a side of ranch dressing, but nobody complained. I also remade my easy white wine sangria, but the real crowd pleaser award goes to the baked goodness I like to call …
Chocolate Chip Banana Mini-Muffins
I was on the search for a quick and easy baked mini muffin and stumbled up these banana mini muffins from So Tasty, So Yummy. So tasty, so yummy and so easy to make they were!
For the party, I wanted to offer a little bit of sweetness and decided to add mini chocolate chips.
It was a wonderful decision.
Ingredients
Chocolate Chip Banana Mini-Muffins
2-3 ripe bananas, peeled and mashed
1/3 cup natural (original) applesauce
1/2 cup mini chocolate chips
1/4 cup brown sugar
1 cup flour
1 egg
1 tsp baking soda
1 tsp baking powder
1/4 tsp salt
prep time: 10 minutes
cook time: 15 minutes
servings: 25-30 mini muffins
Directions
1. Preheat oven to 350° F. Spray pan with non-stick cooking spray, or line with mini cupcake liners.
2. In a large mixing bowl combine mashed banana, applesauce, brown sugar and egg. Stir (by hand) well.
3. Mix in baking soda, baking powder, salt and flour. Stir well.
4. Spoon into muffin tins and bake for 15 minutes.

I actually made these the night before the party, and after a day of storing them in Tupperware, they looked like this:
More banana-y, more chocolate-y if you ask me!

Delicious! Thank you so much! I used my own homemade applesauce for the recipe 🙂 & I know its not a big deal but the recipe doesnt say when to put in the chocolate chips but its common sense lol 🙂

Whatever you prefer, but I always go for the unsweetened!
