I ended up postponing my morning run to an evening one last night. After posting my recipe, I started feeling sick with a sore throat and an upset stomach.
Feeling far from my normal self might have something to do with an out-of-control sweet tooth I’ve had lately.
Running later worked out better because I had great company.
We’re starting a new tradition of going on a family run with Roadie every Monday. I was so proud of him for keeping up with us last week, but now I’m proud of myself for keeping up with him.
Who would have thought our Roadie – the stray we took in a little over a year ago – could keep a steady pace of 8:52 mins/mile the entire 3.5 miles?
Yesterday’s lunch AND dinner were nothing short of completely random. I’m trying out a new strategy of accepting leftovers as meals with two end goals:
1) To eliminate wasting food.
2) To save money.
Before making a trip out to the grocery store to buy stuff we (seemingly) don’t need, I’m making it a point to use up whatever is “on it’s way out” in our fridge and pantry.
Luckily, Scott understands how much this can help us and hasn’t complained about the meals I’ve come up with that make no sense whatsoever.
Yesterday’s lunch is a perfect example of an incidental meal that somehow seems to work out.
It started out with pouring a glass of freshly made iced tea then progressed to not only the using up the rest of our minestrone soup, but also a portion of homemade tomato bisque. Both were enjoyed alongside Sunday night’s leftover vegetables and an almost expired whole wheat English muffin.
And, yes – for those of you who are wondering – I did dip my muffin in the tomato bisque. It’s a must around here.
Sticking to my must eat all leftovers guns, I looked in the fridge to find three things I would never actually plan to put together for dinner.
Yup, you saw right: chicken and Cajun brown rice served with a side of baked beans and strawberries. If that’s not odd, I don’t know what is.
Odd… but surprisingly satisfying.
Today, I’m planning to use up the rest of our bananas in some kind of smoothie concoction.
