Happy Belated Fathers Day to all who celebrated yesterday!
Scott and I spent the morning at church, then finished up a few odds and ends around the house before heading over to my sister’s house. We have some house guests coming over later this morning, so we are spending the next few hours getting ready for them. I’m excited to finally use the fresh cabbage from my grandmother’s garden tonight for some good ‘ol corned beef and cabbage.
Hey, it might not be St. Patrick’s Day, but it is a Hesington house favorite for sure! Erin Go Bragh.
Fathers Day
We had a relaxing evening full of family time, puzzles, and NBA Basketball. Look at my grandmother go!
She leaves to go back to Michigan in a few days, so I was glad I got to spend some time with her before she heads out.
My sister and mother were in charge of the dinner, while I was in charge of dessert.
We started out with green salad. It was simple, yes, but the Romaine lettuce, cucumbers, shredded carrots and grape tomatoes in a balsamic vinaigrette still tasted great.
I decided to go bun-less on the kielbasa because I wanted to save room for dessert. I wasn’t the least bit shy about helping myself to the macaroni and cheese with sauteed peppers and onions, and potato skins with melted cheese and bacon bits. Adding salsa to one of the potatoes was also a great decision.
After dinner, we lounged on the couches and watched the Oklahoma City Thunder/Miami Heat NBA Finals game. Although most of you think I would support the only remaining Florida team, I have to say I am a full OKC Thunder fan on this one, along with the rest of my family.
Shortly after the game started we all dove into dessert. I must admit, I highly impressed myself with these Oreo Cheesecake Cupcakes.
Recipe will be on the blog tomorrow!
My dad seemed to enjoy reading our funny cards and we spent the rest of the night doing what all dads enjoy doing: reclining.
I hope all dads had a relaxing day yesterday, and maybe even filled with a few unexpected presents. Speaking of unexpected presents… I have a small gift to all the mothers and/or women out there!
