With March’s focus of adding more green into your meals, that has become my goal in sharing my day of eating with you.
Whether it is a handful of spinach thrown into some eggs, or a small side salad added to dinner, my mission is to inspire you to eat and love your veggies, with quick tips on how to make them tolerable.
Here we go!
WIAW #2: Another Typical Weekday
I mentioned last week that I would include a variety of different types of days here. While some I am at home from start to finish, I am on-the-go non-stop for others. It really depends on what is going on!
This week, I highlighted another typical weekday that includes me eating at home, with the added challenge of dance practice at night.
The morning started off similar to a lot of mornings around here: scrambling egg whites.
This time I kept it simple and just added spinach and a handful of shredded cheese into the mix. I sided it with two strips of Jennie-O Turkey Bacon and a whole wheat bagel thin smeared in peanut butter, then drizzled in agave nectar.

Mmmm mmm good.
Like usual, I headed back upstairs for a break around lunch time. Since I had practice later on, I decided to have lunch a little later on.
Instead, I quenched my thirst with the last bottle in my Drink Chia stash.

Oh, I also dug right into the last of our peaches.
I have to admit that lunch this day was pretty off-the-cuff. Then again, the majority of my meals are around here. Maybe that is why I like to share them with you?
More times than not, I find what is lying around and make a healthy meal of it. You can too!
Here is my version of “hamburger and fries” housewife glamourized:
It started with me wanting to finish up the rest of the Ore Ida Sweet Potato Steak Fries in the freezer. Fries always make me think of hamburgers, and I just so happened to have the next best thing waiting for me.
Within just a few minutes, I enjoyed a MorningStar Farms Griller’s Prime Veggie Burger on top of a whole wheat hamburger bun, topped with ketchup and a few slices of pickles. Of course, I had to veggie it up with a shred of lettuce and a few slices of tomatoes!
The side of peas was more of an afterthought, and went with my entire day’s theme of using what needs to be eaten in the refrigerator.
This is an awful picture, but I wanted to at least mention the deliciously addicting pretzel crisps that have been occupying my tummy. Below you will see the absolute scraps of the bag, since I managed to eat the entire thing in a just a few sittings.
Most of them were dipped into hummus, but when the hummus was gone I just kept on goin’… I guess you could say I have been on a pretzel kick lately. Love them!
Since lunch was later – and I was, in fact, the girl who lifted up the pretzel bag to let every little last crisp enter my mouth – I was feeling pretty content before practice.
I was running early, and hopped into Target for a few minutes to kill some time. I don’t know about you, but it is painfully hard for me to go into and not get a Starbucks treat to hold onto.
This time, picking a drink was exceptionally easy. I saw the words new hazelnut macchiato and I was sold.
When asked for “skinny” – using non-fat milk, sans the whip cream – it only clocks in at 140 calories. So, so yummy, and my obsession with hazelnut clearly continues!
By the time I got home almost four hours later, I had worked up quite the appetite. While deciding what to possibly stuff myself with, I defaulted onto one of Scott and I’s favorite go-to’s.
Blue corn chips and salsa!
We keep a ridiculous amount of both chips and salsa around here. It might actually be an obsession, considering both of us dig in at least a few times a week… every week. Oops!
That kind of appetizer got my tummy rumbling for something Mexican. I bought a few new Healthy Choice Baked entrees last week, and figured this was the perfect time to try one out.
I try not to heat dinner up in the microwave very often, but when I do ninety-five percent of the time it is a Healthy Choice Cafe Steamer. When it is 10 o’clock at night and I am hungry, they are nice to have ready in five minutes time.
While waiting for dinner to heat up, I quickly put together a green salad.
(A small amount of romaine lettuce, diced cucumbers, diced tomatoes, diced onions, and fresh dill all tossed in balsamic vinegar and a little bit of grape seed oil.)
By the time I was done chopping and tossing, our baked enchilada dinners were served.
Not too shabby, friends!
It is no secret that I have an obvious love affair with chocolate, especially at night. Like clock work, my body craves it after dinner every single day. Instead of fighting it, I have found several ways to keep my stomach happy without ruining my healthy eating lifestyle.
This night’s sweet tooth was satisfied with Baked Oreo Thin Crisps (<- my favorite 100 calorie Nabisco dessert pack!) and a glass of light vanilla soy milk.
For the size of the bag, I am always pleasantly surprised of how many crisps they sneak in there! Totally worth every last calorie.
Off to complete a home workout and get some projects and errands done before practice tonight. Hope you have a great rest of the day!
