It’s Wednesday, and if you have stopped by the blog a time or two, you might know what time it is…
March’s focus is how to add more green into your meals, so that has become my goal in sharing my day of eating with you. Green does not always have to mean vegetables, either. As far as this post goes, anything organic and green sounds good to me.
WIAW #3: Typical Tuesday
After the whirlwind of St. Patrick’s Day followed by a game day, I was glad to have a day at home to catch up yesterday. From start to finish, I sat myself in front of the computer, and only got up when I started to feel rumbling in my tummy.
While I normally stick to snacking and lighter meals throughout the day, I had leftovers to indulge in for lunch, which became a huge filler.
Sometimes it just works out that way!
I cannot believe I have yet to share a picture of overnight oats on the blog. I heard the rage about them about a year ago, and have been often enjoying them on early wake-up calls.
Back when I taught 6 a.m. barre classes, you better believe I had a breakfast similar to this one ready to go as soon as you can say “Annnnd I am driving in the dark again!”
A giant cup of coffee is always a given. Nobody can pry that sweet mug of goodness from my hands! This week’s pick is from our latest trip to Made In Detroit. The flavor is Mackinac Island Fudge made by Sander’s, and it makes me incredibly happy. Per usual, I mixed in a little light chocolate Silk and a little bit of stevia. Perfection.
This time I went green with fruit. First came the non-fat Apple Cinnamon Chobani Greek yogurt, then the rolled oats, almond milk (you can use pretty much any variation of milk!), and chia seeds. When I woke up in the morning, I quickly sliced up a crisp granny smith apple and had a delicious and green breakfast ready to go.
Different from most, this day did not include any snacks. The reason is this big hunk of fajita leftovers from the night before:
With a good portion of chicken fajitas left, I wanted to do something a little different with them.
First I exchanged the plain white tortillas from the restaurant for one big Smart & Delicious™ High Fiber, Low Carb tortilla from La Tortilla Factory. Next, I added a bottom layer of romaine lettuce. Finally, I turned my fajitas into a “fajrito” – if you will – by rolling it up and drizzling some Taquera Salsa sent over from my friends at Tortillas Nuevo Leon.
I needed a fork and knife to eat the darn thing, but it was so worth it.
Every last bite.
Like I said earlier, those leftovers had me pretty set for a while. Most Mexican food tends to do that… but I just can’t say no!
Taking a break from sitting at the computer, I turned it around and threw in my XTrain video workout for the day. I think the hour of cardio kickboxing was the only way I would have been able to work up an appetite again.
After a quick shower, I went over to the fridge and made a monster salad with anything staring at me.
Romaine lettuce, fresh spinach, sliced cucumbers, tomatoes, green peppers, butternut squash, and a MorningStar Farms Spicy Black Bean Burger.
As if it isn’t obvious, you all should know how in love with MorningStar products. They supply my favorite kinds of veggie “meat”, making it effortless to add extra protein to salads, wraps, and breakfast!
With the flavor from the burger, all I needed for dressing was a little bit of balsamic vinegar, a slight drizzle of grape seed oil, and a few shakes of pepper.
I have had the most incredible sweet tooth lately. Lucky for me, there is the Skinny Cow who looks out for me and creates delicious low-calorie, low-fat treats!
This week I stumbled upon something that actually pushed them up a few notches in my book – if that is even possible. I present to you the 150 calorie ice cream cup:
This day’s flavor was a fantastic Chocolate Fudge Brownie, but my favorite so far has to be the Cupcake Batter… hands down. It one hundred percent tastes like funfetti cake, and I was so impressed that I tweeted them a nugget of my appreciation.
