Wow… it’s already Wednesday! Alrighty then.
I hope your week has been going well (and fast) for you as well! Today I am ready to dive right back into What I Ate Wednesdays after putting them to the side for a couple of weeks. Excited?
My hopes and dreams in doing these weekly check-ins are for you to get a nudge of motivation to try something new (and hopefully healthy) while adding more color to your plates. Eat a rainbow of fruits and veggies, as some people like to say.
Just like most of you, my eating habits vary from week to week, but for the most part I aim to keep them clean with a little room for splurging. Because, when it’s all said and done we all go there anyways, and that’s perfectly okay. Now onto the eats!
What I Ate
Here’s a look at my entire day of food intake yesterday.
I wanted something yogurt-y and filling for breakfast, and made an attempt to create a yogurt bowl without having to put in too much effort.
I sided it with a slice of cinnamon raisin Ezekiel toast (have you tried that yet? Yum!) topped with the cookie and cocoa butter spread I raved about on Friday. Seriously. This stuff. Amazing!
All of that held me well over into lunch after a hair appointment in Royal Oak. Around 2:30 p.m., I joined my hairdresser and her friend for lunch down the street at Town Tavern.
Both of them raved about the house chopped salad, so I had to give it a go.
It came with tomatoes, cucumber, red onion and garbanzo beans all chopped up into super small pieces which is exactly how I prefer to eat my salads. Also, the dressing was bomb. I need to somehow recreate it at home!
Knowing I needed something else to fill me up, I ordered their venison chili, sans sour cream.
I am not usually one to order red meat, but had to test it out when I saw three awards listed under it. It was delicious and had just the kick of spice to it I was hoping for!
Feeling more than satisfied, I walked a few blocks back to my car and continued to run errands for the remainder of the afternoon. I almost put on my running shoes for a few quick miles around the neighborhood, but let that idea go when I noticed how cold it got without the sun out. Not this week, Roadie, sorry.
It worked out for the best because Scott and I invited a few friends over for dinner. I have an impressive collection of Tortillas Neuvo Leon regular, wheat and corn tortillas to use up (thanks again, Olga!) so took that as inspiration to make something new.
As soon as I got home from the grocery store I washed and prepped berries that I might have had a few handfuls of.
I also might have consumed about half of this bowl of gluten-free corn chips and salsa while helping prepare our meal.
The cuties, however, somehow ended up on the floor when Scott tried to teach Alex to juggle. Every time she dropped one Roadie swooped right in and stole it creating his own little stock pile. It was hilarious!
Big shout out to Scott for coming up with majority of the recipe for chicken fajita tostadas and doing most of the cooking on this one. Ha, I love when that happens…
I’ll be sure to post the recipe for these very soon!
Before bed, we couldn’t help but get into the Girl Scout Cookie Thin Mint ice cream too. Yup, it exists and is just as dreamy as you expect it to be.
I felt bad for a second, but quickly got over it when I remembered I limited myself to one tostada. They were filling! It’s all about moderation my friends. Last night, ice cream trumped dinner. 😉

Question of the Day
• What is the one thing you can never say no to?
For me it’s a lot of what you just saw: salsa and chips and ice cream. Okay, add kettle cooked salt and vinegar chips to that list to. They’re so bad for you, but soooo good. As long as my overall eats for the day were on the healthy side I allow myself to indulge when my body is craving them.
