Hello, hello! Today I am jumping right into the eats for What I Ate Wednesday. Per usual, I go through an entire day of unfiltered meals and snacks on any given Tuesday to share with you on Wednesday.
The point is to show you that eating a (mostly) balanced diet isn’t something you have to do a ton of meal prepping and planning for. I have never been one to spend my weekends thinking about what I will be eating the following week, and hope you find inspiration from these posts here and there. Let’s get to it!
What I Ate
Breakfast started with an old go-to. It had been a hot minute since I made eggs at home and craved them.
Egg whites + egg beaters scrambled with cheese, turkey bacon, and a cup of coffee with almond milk and stevia.
That held me over for a while, until I discovered a big batch of organic grapes that needed some attention.
And by attention, I mean devouring them by yours truly for a snack.
I spent the morning working on the computer, then took a break for a late lunch around 2:30 p.m.
I can’t help it if there was leftover pizza with Italian sausage and peppers that needed to be eaten, right? I happily enjoyed two slices and made a quick side salad to round it out.
Romaine lettuce, tomatoes, carrots, mushrooms, and green olives with ground black pepper and a vinaigrette dressing.
Scott got home from work right at 6 p.m. which was just enough time for me to get ready for Fitness Pilates class!
Yup… for the moment, I have my membership back. You better believe I am going to use it while I can!
Class was extra hard, and I’m not sure if it was because I took some time away or if the instructor wanted to challenge us. I’m guessing it was a little bit of both!
With all of the running we are about to do, we skipped on cardio and came home with appetites. I hopped in the shower and was ridiculously excited when I came down to this beautiful sight waiting for me.
Navel orange, cilantro, kalmata olives, and onion drizzled in picholine extra virgin olive oil.
If you happened to catch a similar instagram photo I shared over the weekend, we found a navel orange salad at a new restaurant that we had to re-create at home. That we did! It tasted fabulous and will be something we prepare for guests and small dinner parties in the future.
Still playing refrigerator clean out, I heated up the rest of another re-make of almond crusted chicken and corn on the cobb.
Scott must have been in a cooking mood because he whipped up a batch of his infamous homemade salsa directly after that.
I have never shared the recipe! I think I just might tomorrow…
After I cleaned up the kitchen, I carried my books and laptop upstairs to study. I feel like I’m finally getting into the habit of cracking them open every day. (It’s about time!)
I grabbed a tall glass of dark chocolate almond milk before bed and called it a night around 11:30 p.m.
And I guess that does it for this edition of WIAW! I am off to run a couple of important errands, but will be back later this afternoon. Happy Hump Day!
