This Italian sausage and tortellini soup is extremely flavorful, filling, and loaded with healthy ingredients! The recipe is easy to throw together and only requires one pot for a crowd-pleasing dinner in about 45 minutes.
I absolutely love this time of year, and I think the cool, brisk weather has a lot to do with it. It’s been raining on and off for a few days in New York, so I’ve been craving big bowls of soup and have been enjoying the leftovers for days at a time.
Soup is a true comfort food, and the heartier recipes have quickly become a staple in our home. My favorites always include a protein, carb, a ton of veggies, and flavorful herbs and spices!
I’ve been playing around with different soups and recipes lately, and I have to pat myself on the back for this one. It might just be my favorite recipe that I’ve ever shared here. Seriously. It’s so, so good!
A key part of this recipe is the tortellini, and you can use regular cheese or choose your favorite variation. I had a package of spinach and cheese tortellini on hand, so I went with that and it did not disappoint.
I’m very proud of this one, and once you taste it you’ll know why. It’s a delicious bowl that tastes like it took all day to make, but really, you could have it finished and on the table in under and hour.
It’s perfect for those busy weeknights, and you only need a few ingredients that you might not already have on hand.
