This week I needed a quick and easy recipe using very few ingredients. I am currently staying in an extended stay hotel with a very small kitchen, so a healthy dessert consisting of three ingredients sounded pretty darn appealing!
With a few ripe bananas to spare, I looked for a simple recipe to use them up and found a delicious treat from FitSugar.com.
Freezing Greek yogurt in the middle tastes pretty similar to well… frozen yogurt or even ice cream. If you are a fan of peanut butter and bananas, you are really going to love this one!
5 medium ripe bananas
1 Tbsp. all natural creamy peanut butter
2 oz. non-fat vanilla Greek yogurt
1. Peel one banana, mash it, and mix in a small bowl with yogurt and peanut butter. Set aside.
2. Peel the other bananas. Slice into half-inch thick slices.
3. Smear the peanut butter/yogurt/banana mixture on half of the banana slices and make banana sandwiches by places the other half of the banana slices on top.
4. Place on a wooden cutting board or plate and freeze for at least two hours.
These frozen mini sandwiches are so, so easy!

ooo that looks like a great idea. how do you tend to store these once they are done, in case you want to save for later?
Well, that is a good question as bananas are tricky! This batch didn’t last longer than two days before hardening… if you have extra of the middle yogurt/PB filling mixture, I would suggest keeping that in the fridge or freezer and making a second one with fresh bananas a few days after the first one runs out 🙂

I’m going to dip them or drizzle them in chocolate – maybe then you won’t notice they turn color in the freezer
