I have always been a fan of breakfast wraps. Even though it might be labeled breakfast, I enjoy wraps like this one at any time of the day. In the morning, at lunch time, or even after a workout, they become the perfect quick and healthy meal on-the-go.
We are currently living in an extended stay suite in Auburn Hills, Michigan until we can find a permanent home here. I am so thankful to have at least a tiny kitchen to work with, and am happy to be able to cook simple recipes for the next few weeks. First up, is a breakfast (or anytime) wrap!
I call this recipe a Greek Power Wrap because it is full of fuel to get your body moving. Protein packed with eggs, meat, and high fiber tortillas, this mix is sure to keep you satisfied for hours at a time.
I chose to use Al Fresco breakfast chicken sausage, but you can opt to use regular pork or turkey. Combining that with a few of my favorite veggies inspired a little bit of a Greek combination, so I ran with it and finished it off with a little bit of feta cheese. It was a delicious mixture, if I do say so myself.
Ingredients
4 large eggs
1/2 cup fresh spinach
1/4 cup red peppers, diced
1/3 cup onion, diced
1/4 cup black olives, sliced
1/3 cup tomatoes, diced
1/3 cup feta cheese
3 chicken (or turkey) sausage links
3-4 whole wheat tortillas
prep time: 10 minutes
cook time: 10 minutes
servings: 3-4 (depending on portion size)
Directions
1. Preheat large skillet and spray with non-stick cooking spray.
2. Cook sausage in a small skillet and chop vegetables.
3. Scramble eggs and add prepped vegetables and sausage when eggs are close to being done.
4. Scramble everything together, add feta cheese, then scramble for another minute or two.
5. Turn off stove, then place tortillas on top of the eggs to warm, for a minute. Remove.
6. Fill tortillas, roll up tight and serve.
Breakdown
Cook sausage in a small skillet and begin to chop vegetables.
Prep all ingredients and place to the side.
Start scrambling the eggs.
Add vegetables and sausage when eggs are close to being done.
Scramble everything together, add feta cheese, and scramble for another minute or two.
Turn off stove, then place tortillas on top of the eggs to warm, for a minute. Remove.
Fill tortillas and roll up tight.
Serve…
