Hello! Welp, this morning started off on a green note.
Gluten Free Ancient Grains Waffles topped in Key Lime Greek Yogurt, 1/2 a sliced banana, and sprinkle of chia seeds.
Is anyone else celebrating St. Patrick’s Day with anything and everything green? I’m hoping you are nodding yes, you know, just in case the pinch monsters are out there looking for you.
I’m trying my best. I’m not quite feeling myself today, so my original plans of cooking up something Irish may or may not happen. There’s talk of Scott cooking his famous Corned Beef and Cabbage, but there is a home game tonight… so I don’t see that happening either.
It’s a serious bummer, since we take this Irish holiday pretty seriously around here. Obviously.
If I happen to get over whatever kind of head cold is trying to bring me down, I will be looking at some of these last minute Irish dishes to make later on!

Ha. I’m actually making Gina’s Crockpot Corned Beef and Cabbage. It’s cooking away right now! Also, I’m planning on making her soda bread muffins. I made them last year and they were delicious 🙂

The blackhole pinterest – so accurate, haha!! I seriously haven’t celebrated St. Patty’s in at least 3 years. Actually, 3 years ago I WAS suppose to attend a sweet St. Patty’s party (because the 17th was actually on a Saturday – score!), but the day before it, I took a pregnancy test that told me I would not be able to enjoy all things alcohol-related, so I had to cancel my plans so no one would immediately find out the news! haha
Today is actually my grandpa’s birthday so maybe I can just try and party it up with him next year haha

I totally didn’t do any leg work to make a festive dinner and am really bummed now! I have been sick the past few days and it definitely caused all of my ideas to go down the drain! These dishes all look mouth watering though, so maybe this weekend! Hope you feel better!
