Scott returned from Australia on Tuesday night, and has been struggling with jet lag ever since. He’s been over seas quite a few times, but this is the first time upon his return that he might actually have narcolepsy.
Poor thing. His body clock is all out of whack: he takes naps during the day, goes to sleep by 9pm, then becomes wide awake by 4am. I’ve tried my hardest to cut nap time and get him back on a normal sleeping schedule, but either way he yawns about 100 times a day.
Yesterday, it felt good to get in 8 hours of sleep and still wake up by 8am on a Saturday morning.
I hadn’t done that in a while and after I felt a breezy 75 degrees outside, I took advantage of it and ran for me.
I didn’t have a mile or time goal, and instead just enjoyed running by myself, at whatever pace felt good. I think I should do this more often because I ended up knocking out 7 miles in 1:01:29. (Secretly high fives self.) 😉
I had built up an appetite by the time I got in, and came up with something delicious in 10 minutes.
Peanut Butter & Banana “Sammich” Smoothie
It sounds a bit odd, but somehow the random ingredients I threw together tasted similar to one of Scott’s favorites: a peanut butter and banana sandwich – or what he calls “sammich.” He was quite the fan, and so was I.
Ingredients
2 bananas
2 tbsp peanut butter
2 cups milk (I used skim)
1 tbsp Ovaltine (chocolate or malt)
1 scoop whey protein powder
2 cups ice (for thickness)
servings: 2
For the filling and satisfying peanut buttery taste, this smoothie is considerably healthy coming in at around 350 calories per serving.
It was the perfect post-run snack and held me over until dinner.
I had been looking forward to attending the Easter ONE performance at our church, First Baptist Orlando that afternoon. If you followed my first blog, you might remember me dancing in The Singing Christmas Trees back in December.
The same team ran this presentation, and although I wasn’t a part of it this year I enjoyed every moment of it.
ONE was truly beautiful and told a touching story of what Easter is all about.
Trying to ignore the fact that I know most of the cast, I still declare the talent this year impressive. If you live in or near the Orlando area, I urge you to get out there and see it for yourself next year.
We went to the show with a few other girls I dance with at church, as well as their husbands. Afterwards, we had a triple dinner date at Dandelion Communitea Cafe – one of my new favorite all organic restaurants in Orlando.
The restaurant is in an adorable and charming house and specializes in vegan, gluten free dishes. I was pretty hungry after the show and enjoyed every last bite of my Black Bean Quinoa Burrito.
The burrito came with a side of blue corn chips and a dollop of original creamy hummus. I was a very happy girl.
We got home about 8:30pm and Scott was out like a light before 9. We’ve got a busy day ahead of us celebrating Jesus, His resurrection, and our families.
On that note…we’re off bright eyed and bushy tailed to Sea World’s sunrise service. Hoppy Easter!
