It’s Hummmmp Day! And well into it now, too. One of these days there might be a chance I turn back into a morning person to be able to share my daily musings with you before lunch time.
For now, I am doing my best to handle my husband’s spontaneity and go with the flow of our ever changing NBA schedule. Thanks for sticking around through it all!
I know most of you are expecting a What I Ate Wednesday post today. Because it’s Wednesday, and I almost always participate in them.
Today, however, I’m taking a step back from highlighting my entire day of eating because it was a game day and filled with the same old things. Instead, I wanted to quickly feature two easy peasy meals I have been practically living on this week.
1. Pumpkin (in the) Protein Pancakes with Pumpkin Butter
Using my same regular pumpkin protein pancakes recipe, I spiced it up a little by adding a 1/2 cup canned pumpkin into the mix.
It turned everything orange, but became a great wet ingredient fix when I ran out of milk.
I topped it off with a generous few spoonfuls of pumpkin butter from our latest trip to Yates Cider Mill and it was pretty much a pumpkin lover’s dream.
(Note to self: take a stab at making pumpkin butter as soon as possible.)
2. Amy’s Veggie Burgers and Sweet Potatoes
This is the first week I’ve ever tried Amy’s Kitchen burgers, but I have loved everything from the Non-GMO brand so far. I have to say… I didn’t expect this Sonoma Veggie Burger to so “fluffy” and breakable.
I guess that’s what happens when you use all organic, whole food ingredients in things. 😉 I love the combination of vegetables, quinoa and walnuts and have had this burger with a side of cubed sweet potatoes three times this week!
I think it’s clear that I really need to make a trip to the grocery store, which I fully intend on doing along with a list of errands tomorrow.
It’s a super short post today, but I must get rolling. Routine reviewing, workout, and team practice awaits! Oh, and don’t forget a random last minute invite to the PINK concert tonight too. Scott’s spontaneity I tell you!

I turned orange when I was a baby from eating too much pumpkin/squash/sweet potatoes….it just may happen again, too! 😉

I just bought the pumpkin butter from Trader Joe’s and OOOOMG it’s so freakin good! I’ve been putting it on absolutely everything! I’m gonna have to stock up for the rest of the year so I don’t start having withdrawals. I’m definitely giving your pumpkin pancake recipe a try tomorrow morning post workout!
