It’s Thursday! Where the heck has the week gone? I seem to say this a lot, but they sure are fl-yyyying by.
I think the reason for me is clear… I find myself as busy as I was in Orlando. This is a good thing, but certainly makes eating healthy at late and unconventional hours a challenge. Lucky for me, there are plenty of things I can keep and turn to in the refrigerator and freezer when I get home late.
So what has been keeping me so busy? An NBA schedule again!
For the last month, I have been practicing and performing in majority of the halftime shows for the Detroit Pistons! I am having an absolute blast, and have been reminded what it is like to dance in the NBA again.

Last night I got home a little “early” right before 10 p.m. I worked up quite the appetite, but did not want to indulge in a huge bowl of cereal like I often used to do after practice in college.
Instead, I quickly put together a power salad, and it was the perfect amount to satisfy my hunger before turning in for bed.
I started with baby spinach and added sliced mushrooms, fresh (raw) green beans (<- I like the crunch!), and green peppers drizzled in a light ranch dressing, then topped with a Morning Star Farms Chik’n Veggie Patty.
All of the vegetables were already prepped in the fridge, so it was easy to grab and make in a flash.
A Day in Royal Oak
As the months go by, I am slowly getting acquainted with what is around us. I have heard a lot about different areas and cities to visit, and yesterday was my first time going over to Royal Oak.
It is located about thirty minutes south of us, and just as charming as I expected.
Before I moved up here, Scott told me about a music festival he went to here and that was the first day he knew we would be “just fine” up here. Downtown even hosts a variety of community events including art festivals, nature walks and holiday shows.
My hair appointment brought me over yesterday afternoon, and I really want to make another visit soon with Scott. I saw plenty of cute, eclectic restaurants and to try out.

Since yesterday was my first hair appointment in a new salon, I knew it might take a little longer than my normal two hour time slot. I noticed a new protein shake in the refrigerator before I left, and grabbed it to try at the salon.
I think Scott’s father left it here from Thanksgiving, so I should have him to thank for introducing it to me.
My first BOOST Nutritional Drink was delicious and packed with protein!

By the way, I took this photo in the car with my iPhone. I hate how every time I rotate the camera to face myself I get shadows and apparently roots. Did I not just get my hair done? Remind me to quit doing this! 😉
After walking around for a bit, I headed back home to Rochester Hills and my fullness from the little protein shake was long gone. Right away, I dug into a Florida orange and popped an early dinner into the microwave.
I swear, Healthy Choice Cafe Steamers are a life saver for me. Whenever I have about ten minutes to make dinner and eat it, they are my number one choice of fuel!
One of my new favorites is the Parmesan Pasta with Rosemary Chicken. I love the flavor, and little pops of pepper and corn.
Scott actually introduced me to these steamers a few years ago, and we keep at least five or so on hand at all times. Beats fast food any day!
Off to start another day of cleaning, gym time, and attempting to Christmas shop before a company Christmas party tonight. I cannot believe the holiday is only twelve days away! Eeks.
Question of the Day
• When you get home at a late hour, it is hard for you to eat healthy when hungry? What are some of your go-to quick and healthy meals?
As you know, I always keep steamers and Morning Star Farms products in the freezer. I also make sure to prep any fruit or vegetables beforehand so that they are ready to grab and eat at any time. I have learned that doing so helps me eat healthier when I do not want to spend a lot of time preparing a meal.

One of my faves are sweet potatoes. I try to bake 5 or 6 sweet potatoes once a week. That way, it saves me time if I ever get hungry. I place them in containers in the fridge and eat ’em thoughout the week with meals or as a snack. I also bring them to work with me. 🙂 Lately, I’ve been making smoothies with my Magic Bullet! I’m completely obessed with it.. I throw in a bunch of fruits, veggies aaand chia or flax seeds. 🙂 YUMMY.

Smart idea! I need to get on baking sweet potatoes more often… I love them and never want to spend the time actually cooking them in the oven. Great tip! Oh, and I LOVED my bullet. I say loved because sadly, it has left us and moved on to another place. I miss it every day!
