Good Afternoon! Hopefully your Monday hasn’t been too rough on ya so far.
With Opening Night just a few days away and a trip down to Florida over the weekend (EEK!) this week is going to be a little nuts. But we’re just going to keep rolling with it.
Over the past few weeks, I have been linking up with Katie and several other bloggers who share what is making their Mondays marvelous. It’s also an excuse to recap the weekend and puts the temptation to give into the Monday blues aside.
Plus, today is National Chocolate Day. I, for one, plan to take full advantage of an excuse to indulge and enjoyed a few of Scott’s pumpkin chocolate chip cookies to celebrate.
(Or twelve. It’s fine.)
Weekend Highlights
Since nothing terribly exciting happened over the weekend, I’ll try to keep the highlights short and share quickly.
Friday night included getting together with a handful of friends.
Saturday morning came too early, but got a lot better when I made another batch of pumpkin oatmeal. Oh, did I mention that I constantly use this ingredient around this time of year? Don’t worry… you’ll get used to it. 😉
The afternoon led me to a dancer appearance at Halloween City, where I may or may not have picked up a few Halloween costumes to have on hand “just in case”.
I can’t give away the details, but I will tell you one of them is pretty magical.
And awesome.
Scott and I decided to hang low and spent the rest of our night cuddled up watching movies. He even got the itch to cook dinner and bake for us!
His goal was to start going through the things just sitting in our freezer, and as dinner was served, I couldn’t help but to smile at what was in front of me.
Hey, I have to give him credit for selecting veggie patties, veggie mini corn dogs, and sweet potato fries!
Quickly following dinner, he tweaked a few recipes to create his own pumpkin chocolate chip oatmeal cookie with cream cheese frosting.
I’ll be sure to share the recipe once I remake them in a “skinny” version. Believe me, after a few dozen of them haunting me over the past few days you’ll thank me when I (hope to) post a version with half the calories.
Sunday started how I wish a lot more of them did. We usually have practice in the morning, but ours got pushed back to the afternoon yesterday, so I met a friend of mine at church.
We planned to have lunch, but ended up driving thru Starbucks for a pair of breakfast sandwiches and skinny vanilla lattes instead.
The rest of the day flew by with a five hour rehearsal for our upcoming Opening Night halftime.
I’m excited to see the final product and might have to share the video with you when it’s up. Mainly because I get to play with a light-up hoola hoop in the dark.
My appetite was quite strong after practice, so Scott and I took it upon ourselves to enjoy dinner across the street at a new sports bar and restaurant called Ciccarelli’s.
Along with our friend Alex, we split a antipasto salad and a pizza with chicken, cilantro, red onions, and banana peppers.
It was so, so good and well deserved if you ask me.
And now we’re back to Monday. I’m sitting here with a setting spray tan getting ready for another long halftime practice tonight. I’m hoping fit in a few projects before then and maybe even a new smoothie recipe if I’m feeling creative. Hope you have a great rest of your day and I’ll catch ya tomorrow!

Glad you had a great weekend! That pizza looks good! We have what we call “freezer night” and it’s actually kind of nice. Easy dinner + freed up space = a good time. 🙂

I celebrated fall by making some pumpkin spice cookies last night with cream cheese frosting. They definitely can’t be considered “skinny” in any way so I’d love to see your skinny version!
