Hi friends! I hope you all had a great weekend.
Ours was a great mix of relaxing and being productive, just how I like ’em. We didn’t have too many plans going into it besides organizing our apartment … also known as the longest task ever. Really though.
Everything will come together eventually. I have faith. If you have ever lived in a small space with years of your life to sort through while moving into it, then you probably feel me on this one. Slowly but surely, we are purchasing and assembling effective storage pieces to help us make sense of everything.
Those of you who follow me on Snapchat (username: lifenleggings) get the first look into everything that goes on around here. In fact, a lot of the pictures that I’m sharing today were saves straight from chats!
I’m currently typing this post up while Scott finishes up putting together our new storage bed. It’s pretty late (early at this point?) … but I’m not complaining. I’m excited for the extra drawers and space!
Anyways, it’s been a while since I shared a weekend recap bright and early Monday morning. From what I gather, you guys seem to enjoy reading them, so here we go!
Friday
After a last minute interview got rescheduled for Thursday afternoon, I was looking forward to having the morning and early afternoon to catch up on emails and things around the house on Friday. Scott and I took Roadie with us to run some errands around lunch time, and the weather couldn’t have been better.
We returned around lunchtime, and I was thankful to have leftovers waiting for us to heat up in the refrigerator. I shared a similar picture of this on my social media channels, but for those who might have missed it, here is the recipe for this one pan roasted shrimp and green beans dish.
So easy and so delicious!
Right before 3 p.m., we headed downstairs to help our neighbors and good friends set up for their daughter Kinsley’s birthday party at a nearby park!
Ice cream was the theme of the party, and everyone was looking forward to celebrating with the birthday girl. Isn’t she adorable?
After a several hours of sun and way too much sugar, we walked back home for some downtime before we met some of the adults for another kind of celebration later on … Friday night.
I have to admit that it’s really nice to be able to walk to places and then either take the subway or simply walk back home at night, especially after ordering a drink or two. We feel completely safe in our area, and there’s always people out on the streets to make our walks home feel comfortable.
Saturday
It was supposed to rain throughout the weekend, so after a day of going through boxes, we took a break to get outside and enjoy a rain-free run through the park before the sunset.
I’m really loving our little path towards the park, around the loop, and then back home that we’ve completed a handful of times. The running loop has a decent amount of hills built in for a challenge, and it’s just long (and short) enough to be a route that Roadie can jog as well.
After cake, ice cream, and pizza the day before, I figured it would be a great time to load up on nutrients for dinner. It didn’t take long for me to throw these cilantro rice, white bean, and kale salads with hard-boiled eggs together.

I cleaned up just in time to babysit downstairs and enjoyed a night in with movies once the kiddos went to bed.
Sunday
We decided to sleep in yesterday, and we got out of bed and ready to go into the city just in time to visit a new-to-us church. We’ve been bouncing around different churches and campuses, and we will probably continue to do so until we find one that feels like home.
I made a coffee for the walk and subway ride over (note to self, buy disposable to-go coffee cups), and snapped a quick photo while we were waiting for our train to arrive. That filter certainly doesn’t do anything for our tans …
We liked the service and will most likely be back. On top of a great message, they served complimentary donuts and coffee following the service.
Speaking of donuts, Scott took us through some interesting stops on the way home. First up was Times Square to show me where he will be working (for now) at nights.
And, no, he’s not going to be one of those silly characters you see that flood the streets and bombard you. Annoying much?
Our second stop involved … you guessed it … donuts.
We have heard a lot of praise towards Dough Doughnuts, and we finally got close enough to try a couple. There are two locations in Manhattan and one in Brooklyn, so it surprised me that we made it to the location on 19th Street first.
Just like most boutique donut shops, it’s a tiny spot that highlights specialty donuts and unique flavors. They create some interesting flavor combinations for donuts including a lemon poppyseed and matcha green tea. I could have easily chosen ten flavors, but we stuck with one each. Scott picked the Hibiscus and I chose Mocha Almond.
The hibiscus was intriguing! I could definitely taste a slight hibiscus flavor in the glaze, and it was tart and sweet at the same time. I enjoyed my mocha almond, but I have a feeling that it doesn’t hold a candle to some of the other options. We will be back to taste test, don’t worry.
We received a highly anticipated delivery from IKEA by mid-afternoon and (quite literally) spent the rest of the day and night assembling our dresser and storage bed. Well, Scott did. I assisted where I could, and mostly provided moral support and refreshments.
Since we had donuts and snacks for lunch, we decided a healthy green smoothie for dinner sounded perfect. Once again, I already shared this on Snapchat … but here’s what I threw into the blender:
Strawberries, bananas, apple slices, kale, Greek yogurt, almond milk, and ice. It was delicious!

The best donut I’ve ever had in my life was from Dough (not counting the apple cider donut that I had here last year) and it was blood orange. Literally still remember eating it. Changed. My. Life. Also as big as my head. I got it at the Brooklyn Flea when I was in grad school.
On that note, I’m going to Yogurtland to get my sugar fix 😀
