I have been loving eggs lately. They are considerably easy to make, but if they required just a little less of an effort, I might have a side of them at every meal. Is that weird?
More times than not my eggs are filled with veggies. Yesterday, I wanted a veggie omelet, but didn’t feel like chopping a bunch of vegetables up.
Instead of loading my eggs, I quickly diced up a few red and green pepper slices and called it a day.
Sided with a few crisp slices of Jennie-O turkey bacon (a favorite lately), and topped with a generous drizzle of sriracha hot chili sauce, I was very happy with how breakfast turned out.
It must have kept me full, because I didn’t even my rumbling tummy until about 1 p.m.. By then, I was wrapping up cleaning up the house, and didn’t want to stop to eat lunch until after my workout.
About a half hour later, I put my gym shoes on and got out the door. I didn’t necessarily have a plan on what I wanted to do besides hit cardio and abs.
Ready for another foot photo? Great.
I have been in an elliptical mood lately, and as soon as I got upstairs I hopped on one and completed my 30 Min. Interval Elliptical Workout. It was easier than I remember at first, but at the halfway mark the sweat started dripping. That’s intervals for ya!
After cardio, I spent a few minutes doing some arm exercises with free weights, then finished off with about ten minutes of my favorite ab exercises from Fitness Pilates. I’m hooked I tell you.
Lunch. Dinner. Dessert.
As soon as I walked in the door, I searched the refrigerator and found the last of Wednesday’s salad waiting for me.
This time I used a big dollop of roasted red pepper hummus for dressing. I also enjoyed a big bowl of fresh watermelon, grapes and blueberries.
The salad was good, but the fruit really hit the spot!
I spent the remainder of the afternoon getting ready for my dad to come in town. After moving away from all of our Orlando friends and family it’s SO nice to have visitors up here and I was very happy to hear he was coming.
We had plans to take him out to dinner, but he didn’t end up arriving until close to 10 p.m. Soup starter to the rescue!
Have you ever tried a soup starter mix? I have tried a few, but this has been one of the best yet.
The box supplies the herbs and main ingredients, and all I had to add to it was diced tomatoes, vegetable broth, and onions.
I also chose to add some spinach, because well… why not? Both Scott and my dad were fans!
I was really looking forward to dessert. While in Minneapolis earlier this week, Scott raved about a bakery named Cupcake. The bakers there are Cupcake Wars winners! He told me he was bringing something special home for me, and I was secretly hoping it was a cupcake (or two).
So close.
I’ll give you one guess as to which one was mine.
Yup, the mint chocolate flavor (duh) that was smashed upside down.
Smashed or not, you better believe I enjoyed every last bite of it. We saved the other three to split with my dad after dinner and we swooned over all of them. Key lime, Blueberry Cheesecake, and Dulce de Leche. Phenomenal.
If you are ever in the Minneapolis area, I insist you stop in and try one!
Well this post turned into a What I Ate Thursday, didn’t it? It happens.
Today, I am excited to spend the day with my dad and leave for my grandmother’s house up north for the rest of the weekend.
I’m not even sure if I will have Internet or any kind of service there, which is sometimes nice to have the excuse to unplug. My intentions are to check in while I am there, but we will see my friends!
Oh, and before I go… I want to wish my dad a VERY HAPPY BIRTHDAY!!!

I have to admit that the Jennie-O turkey bacon kind of reminds me of those dog treat commercial… you remember the ones… “It’s Beggin Time.” At least it doesn’t taste like dog treats! 🙂
