Good Morning and Happy Tuesday!
I am currently in Florida soaking up as much sun and family time as I can. While traveling (and especially while in my hometown of Orlando!) it gets a bit challenging to keep a normal posting schedule, so I have prepared a handful of them in the “normal content” category to interrupt the every day vacation musings some of you may not enjoy reading as much.
First up, and speaking of challenges, lets kick things off with one I received from SOYJOY® last week!
I know we are already well into May, but it doesn’t hurt to share that April is National Soy Foods Month. Some of you might remember the concerns I had about soy, and I am still very cautious about including too much of it into my every day diet.
I am happy to report, however, that SOYJOY® is an all-natural and certified gluten free snack bar that is baked with pieces of real fruit and non-genetically modified (Non-GMO) ground whole soybeans. I have enjoyed their bars for years (love heating them up!), and was asked to participate in their “Paired Perfectly” Challenge.
At home last week, I received a box of goodies from them that included adorable serving plates, cocktail napkins and a Visa gift card to cover any expenses needed to complete the challenge.
I was asked to think of a creative way to enjoy the bars, and also come up with a unique way of serving them at a small get together. That very day, I cut one up and sprinkled it on top of a serving of Greek yogurt to power me before a long run outside!
For being a considerably small snack bar only packing 130-140 calories, I felt surprisingly full after that combo!
A few days later, I got out my variety of bars and cut up the strawberry flavor to make something different.
The bar can get tricky to cut through without crumbling, but I bet it would be a little easier if it was heated up in the microwave first.
One bar produced enough pieces for two fruit skewers.
Just like with any other kind of fruit or treat, I was able to sneak the pieces in there and add a little substance to the sticks!
It tasted delicious and served as the perfect afternoon snack for me, and could have for others if they would have been around to sample. (I guess Roadie can’t always help me out here.)

I like the idea of heating up the bar and using that as a topping to yogurt. Also I like the colors of the packaging for SoyJoy, just seems happy and joyful.

Your fruit skewers are TOO cute! I would pair a bar with either AB or would cut it up and mix it with almonds and raisins!
