Hi friends! How are you doing today? I’m in a particularly peppy mood this afternoon. I must still be in workout-mode or something because I didn’t have more than a cup of coffee early this morning.
I just put together and completed a killer circuit workout I think you guys are going to love. I have a lot of work to do for the remainder of the day, so I knew I wanted to get ‘er done in 15 minutes or less. I’ll try to get it up on the blog tomorrow!
Backing up to this morning, mine was a busy one with a trip to the gym for a personal training session immediately after publishing this morning’s post. I am really pleased with how my first couple of sessions have been going and can’t wait to get onto the schedule more!
I’ll let y’all in on a little secret… my first client is Scott! I volunteered him as my client guinea pig, and my intention was for him to prep me for anything. If I can train him (and get past all of his sarcastic comments and jokes), I feel like I can train anyone. I think I kicked his booty today… and I loved it.
Directly after, we went to a nearby Tropical Smoothie to refuel.
We both ordered the Totally Green smoothie which is on the menu for a limited time only. He added pea protein powder (have you ever heard of this? It tastes awesome!) since he just completed a workout, and I added in a scoop of probiotics.
Why not, right?
We were both a little hungry, so we also split an Early Bird Wrap and asked for the chipotle mayo on the side.
It was such a good breakfast!
Okay, you’re probably wondering why I labeled this post in reference to slow cooker chicken. Let’s get onto that, shall we?
The Easiest Crock-pot Chicken Recipe… like EVER
I had a couple of hours in between blogging and teaching last night, so I took a look at Pinterest to see if anything easy stuck out to me with the very little ingredients I had on hand for dinner. With a simple search of “crockpot chicken” I stumbled upon this Super Easy Chicken Crockpot Recipe from iSaveAtoZ and wanted to give it a try.
I mean… really. Five ingredients with practically no prep time? I’m in!
Ingredients
(Recipe via iSaveAtoZ)
frozen chicken breasts (she recommends 5, I used 3 large ones)
1 can Rotel tomatoes
1/2 bag frozen roasted corn (she used a 15 oz. can)
1 (15 oz.) can black beans (you can use kidney, garbanzo, pinto or others)
1 (8 oz.) block cream cheese (I used light)
seasoning to taste (I used salt and pepper!)
Directions
1. Spray the inside of the crockpot with cooking oil. Drain and rinse beans.
2. Add all ingredients. If your chicken breasts are frozen, that’s okay too!
3. Slow cook on high for about 4 to 5 hours, or until the chicken is done.
4. Serve as is, or take chicken out to shred, then place it back into the pot until you are ready to serve. (That’s what I did!)
This looked like the perfect recipe to enjoy over rice and it was!
I threw everything into the crock pot, set it at high, got home four hours later, cooked the rice, shredded the chicken, and served it shortly after.
Easy peasy!
Scott absolutely raved about this one. We each had the generous serving you see above and still have plenty left over for a couple more meals! I might put it over pasta or even go crazy and make nachos with corn tortilla chips. I know he won’t complain!
Saying we didn’t have much to work with in our pantry would be the understatement of the year. I need to make a serious trip to the grocery store tonight. Last night inspired me to get back to meal planning again! If you need me… I’ll be that girl browsing Pinterest for inspiration.

That’s great your first client is Scott! 🙂 You guys are such a cute couple. I do not use my crock pot as much as I should. It’s so great for leftovers too. When I want to make something I honestly sort of just see what we have in our pantry or I’m searching on Pinterest myself.

My favorite thing to make in the crockpot is minestrone soup. It smells so good when you walk in the house and the aroma of veggie soup hits ya!

I’ve been all about the crock pot recently. And only FIVE ingredients?! Doesn’t get much better than that! I always forget about Tropical Smoothie. We have one not far from our house, but I never think to go there. I should remedy that soon. Yum!!
