It recently dawned on me that I haven’t posted one of my all-time favorites, “ready in a pinch” dinner recipes.
Whether I am lacking in time to prepare much, or if I am simply craving pizza, a variation of pizza toast seems to satisfy every time.
The beautiful thing about this easy recipe is that you can choose the majority of the ingredients and change them up each time you make it. Where most people would use tomato paste or puree, I prefer the taste of good ‘ol marinara sauce in my version.
You could go for the regular spaghetti sauce that is probably already opened and leftover in the fridge, or spring for a jar of flavor packed sauce full of spice and ingredients. One of my favorites to use on both toast and pasta is Newman’s Own Roasted Garlic & Peppers Sauce.
If you are dying to add meat, you could throw a few slices of pepperoni, sausage (or turkey sausage) or shredded chicken (or chicken sausage) into the mix. The possibilities are endless, I tell you!
Ingredients
2 slices whole wheat bread
2-3 Tbsp marinara sauce or tomato paste (depends how saucy you like it!)
1/3 cup shredded cheddar cheese
fresh chopped vegetables of choice
* I used onions, mushrooms and tomatoes
sprinkle of seasonings of choice
* I used pizza seasoning, basil and crushed red pepper
servings: 1
prep time: 5 minutes
cook time: 10 minutes
Directions
1. Preheat oven to 350°F. Spread marinara or tomato paste on slices of bread.
2. Top with ingredients of choice.
3. Top with shredded cheese and seasonings of choice.
4. Bake in oven for 7-10 minutes, or until cheese is melted.
Most people add the cheese first, but I found my way holds the ingredients on better, and eliminates the need to use a lot of cheese.
You could even leave the cheese off all together and make bruschetta.
Either way, this healthier “pizza” combination is delicious.
Bake in the oven for 7-10 minutes, or until cheese is fully melted.
Cut each slice diagonally, and serve immediately.
This recipe is enough for one, but you could also pair it with a side salad to make a complete vegetable loaded meal.
This side salad drizzled in oil and vinegar took about a minute to make, since I used most of the ingredients from extra pizza toppings.
Lunch or dinner under fifteen minutes is the best kind to me. Enjoy!
