Hi friends! I hope your Wednesday has started off on a good note.
There were a few notable meals that took place yesterday, so I figured I would take pictures and follow suite with another edition of What I Ate Wednesday today.
(Have no idea what WIAW is all about? This post breaks it down.)
Let’s talk eats!
What I Ate Wednesday Tuesday
My morning started off with protein pancakes and a big ‘ol cup of orange juice!
I have about four containers of About Time Protein Pancake Mix to get through, so you’ll probably see them pop up a lot in the next few months. Fine by me, they’re delicious!
This time I used almond milk and added a mashed banana to the mix instead of water. The were extra flavorful with the Cinnamon Spice mix, and they tasted great topped in sliced strawberries and agave nectar.
Yum!
After I finished cleaning up breakfast, I took Roadie out for a short stroll around the neighborhood. I appreciated that it was sunny out, but it was just so flipping cold!
We’re currently in the teens and twenties this week… so, unfortunately, we don’t make it too far outside of the field in front of our house or around the block. I can tell that we are both getting anxious for the warmer weather (and longer walks) to return.
That hearty breakfast filled me up for several hours, and I broke out a go-to healthy snack around lunch time.

Since I got kicked off of the Internet all morning, I had a lot of work to catch up on the computer that afternoon. Before I knew it, lunch had come and gone and I decided to hold off on eating anything substantial until after my workout.
I completed the cardio and core focused circuit workout I shared on the blog yesterday at a slow but steady pace.
By mid-afternoon, I was more than ready for lunch and so happy to see that some of our traditional New Years Day “good luck” dinner was still up for grabs. I quickly heated up a bowl of wild rice and topped it with the ham and black eyed pea mixture you see below.

I rounded out my raging appetite with a sliced healthy caramel apple from the refrigerator. (I also grabbed a fork, which helped out with the usual messiness factor.)
The picture doesn’t look like it shows much caramel on the apples, but trust me, the sweetness and goodness is there. I could easily eat one of those every day!
Feeling quite content, I hopped in the shower and got ready for my night shift at work. I trained a client and then taught three classes at the gym. I took snacks with me, but I didn’t feel like I needed them. Scott mentioned meeting a friend for $1 tacos at Rojo earlier, so I was trying to save as much room as I could for the good stuff.

We all dove right into the chips and salsa as soon as it arrived, and I ordered three $1 shredded chicken tacos on corn tortillas with a side of guacamole.
Scott ordered a side of Mexican rice, so I also had a bite or two of that. You can’t really beat the quality of food for the price on Taco Tuesdays!
We skipped dessert (which proved to be a wise decision once the food settled in), and headed back to our house.
Our friend Adam joined us in a late night showing of Star Wars Episode IV (the original) before bed, but we knew it was a long shot that all of us would stay awake throughout it’s entirety. I think I made it about twenty minutes before I dozed off.
Since I had never seen any of the Star Wars movies before a week ago, Adam and Scott are making a point for us to watch the entire series before we go see the new one out in theaters. So far, I’ve made it through Episodes I – III and have to admit that I’m a fan! Who knew?
So there you have my Tuesday in a nutshell. After the last few weeks of go-go-go, it was nice to have more time at home and less time running around. My job at the nursery picks back up next week, so I’m soaking in the free mornings while I still have them!

While I try to be mindful with portions, I don’t count calories. I do, however, take into account how much activity I am going to be doing that day, and I plan my meals and snacks accordingly.

I have been attempting outside walks and runs! It was 15 yesterday, made it kind of difficult, but gotta tire the dogs out hahah.
And I always thought I liked hard shell tacos more, but having lived in SoCal and getting REAL Mexican food (not as good in New England hehh) I love soft shells!

That’s awesome Mary! It’s really hard for me to go for anything over a couple miles this time of year. It just gets too cold, and my phone ends up freezing and dying which is never fun… (I love listening to music). I should probably just layer up and go for a good run this weekend with Roadie. I’m sure he would love it, even if he feels a strong breeze. 😉

I’ve never seen the Star Wars either! My husband made me go see the new one over break and gave me a 30 minute replay of the other episodes, so I was pretty lost 😉 But I actually enjoyed the movie!

I would go see the new one, but I feel like I’ll understand and appreciate it much more once we’re through the series. Honestly, I never thought I would get into them, but I’m excited to keep watching!
Oh man, you’ve got me craving Mexican food now. I always go for the soft shell tacos. If I get hard shell I always end up making a total mess haha.
Whoops – I could go for those tacos all over again! And I totally agree… I had hard shells a few weeks ago and it wasn’t pretty.
Last night, I was meeting a new client for coffee and I made the point to crutch over there and back. I’m such a walker–even being on crutches, I still want to get out there! But crutching in wind and with ice blooooows. Pun intended (after thinking about it)

I’m really intrigued by those pancakes! Typically, I shy away from the “protein” pancakes, just because I prefer regular pancakes. However, we all know which option is the healthier one. 😉 So you’d recommend them?? Any particular flavor?

Oh I totally feel you there. I normally just like regular pancakes, but I have to admit that I’m loving these. I’ve tried both the Cinnamon and Chocolate Chip and, well, the chocolate lover in me goes for those 😉 All are great! I enjoy them most when I make them with milk and add something to the mix like fruit (bananas, blueberries, etc.)
looks like a delicious day of eating! i gotta get my hands on some of that protein mix!

Hi Heather! Good eats, lady! Okay, so I’ve had you on my mind non-stop lately as I watch old episodes of the Dallas Cowboys Cheerleaders: Making the Team show on CMT. Have you watched it? It’s SO entertaining. Anyways, enjoy that cold weather, lady! I didn’t get in my black-eyed peas this year for good luck. Whoopsie.
