Hello, hello!
It’s Wednesday and things are getting pretty busy over here as we prepare to depart in the early morning hours tomorrow. New York City, here we comeee!
I’m hoping to be able to have a few drafts ready to go and publish while we’re gone, so I’m going to keep today’s post on the shorter side. That said, let’s roll right into the latest edition of What I Ate Wednesday.

What I Ate Wednesday Tuesday
Breakfast started a little differently yesterday since we didn’t have most of the usual staples around. We’re slowly trying to empty out our pantry and we’re keeping our grocery purchases on the minimal side with upcoming trips and a possible move on the horizon.
I turned to the freezer and found one lonely waffle left, so I improvised.

I usually eat two waffles for breakfast, so the extra punch of protein with the Greek yogurt and chicken sausage really helped to fill me up. That plate held me throughout the morning and then I turned to a few small handfuls of almonds for a snack before we set out to clean the entire house.

(For those of you who are newer to the blog, I usually work afternoon to nights at the gym and Scott is currently in the process of looking for a new job. Needless to say, our days aren’t quite “normal” around here just yet.)
Since we weren’t around the house much over the weekend, we planned to clean the house and organize random piles of papers and mail that tends to build up in the kitchen. (Does that happen to you guys? Seriously. What the heck… it’s a constant struggle.)
Just before 3 p.m. I realized that I never ate lunch and turned to the refrigerator with a rumbling tummy. Lucky for me, there was one bowl of pasta left from a few nights before.
Spaghetti with meat sauce, mushrooms, tomatoes, and onions
I prefer to use whole wheat, veggie, or gluten-free noodles, but Scott likes regular spaghetti or angel hair so he won this round.
About thirty minutes later, I washed a few generous servings of red grapes and headed upstairs to take a shower and get ready for work.

I drove to work around 4:30 p.m. and started my first session at 5. I taught three group training classes after that and was ready to get home for a late dinner well after 9 p.m. Again, I was thankful to see a leftover chicken breast waiting for me in the refrigerator!
Scott made a big salad with things that needed to be used up, so I just heated up the chicken and gladly sat down to eat a few minutes later.

I couldn’t resist giving into the last couple of chocolate chip cookies from a batch we made over the weekend soon after.
I only skipped out on my nightly glass of almond milk because we’re out!
So, I guess you could say that we did a decent job at clearing out a lot of what needed to be eaten up. Anddd there went our Tuesday!

I used to be all about cake, but that’s changed over the past few years. Right now cookies (dipped in milk) are quickly becoming a favorite food of mine. As in a… “What’s your favorite food?” “Cookies and milk” kind of status. It’s serious!

Just a mail tip that I learned a few months ago and has reduced the mail pile in the kitchen….force yourself to walk to your mailbox (even in the winter) and on your way back up to the house flip through your mail and anything that you would label as junk throw away the minute you walk into the house.

Hi Taylor! Great tip! I actually do that… but sometimes I drive to the mailbox on the way out to work – if it’s just too cold! The majority of our mail is junk, so I make sure to stop by the recycle on the way in. 😉 Now if I could only handle the other papers we randomly acquire!

Sometimes I try and do just one waffle when I’m pairing with eggs or with a yogurt combination, but I always take the second! I like making a frittata or quiche for easy leftovers – pair with some more veggies and I’m good to go.

It really is hard to have just one – yum, frittatas and quiches are both great ideas!

We sometimes make a big 9 x 15 of Spanish Rice to have for leftovers throughout the week. Brown rice, ground beef, tomatoes, cilantro. We will make a rice/bean bowl or eat with tortilla chips or wrap in a tortilla. Love Spanish Rice!

Love making extra pasta or pizza to have as leftovers! I love cold pizza 🙂 And definitely more of a cookie person than cake! I love chocolate chip or sugar cookies the best.

Cookies! Always! I almost always plan to have leftovers. This week I made individual chicken pot pies, and wrapped some in foil to save for another night or for lunches. So much easier. My hubby comes home from work at lunch a lot, so I try to keep leftovers in there for him 🙂

OMG I hate random piles of papers and mail! This happens all the time… how much mail can I possibly get!? haha I am much more of a cookie person… YUM. I love left over pizza, pasta, or thai. Also YUM.
