First and foremost, I want to thank you all for your virtual hugs, messages, and sweet comments left on yesterday’s post. Documenting our journey to start a family has been really therapeutic for me, and hearing that I have brought up and discussed things on the minds of so many only gives me more reasons to keep it up. I truly appreciate your love and continuous support so much!
On a lighter note, it’s Wednesday, so let’s get into covering an entire day of unfiltered eats. Below you will see everything I ate yesterday that exemplifies a typical Tuesday these days.

What I Ate Wednesday Tuesday
Breakfast came together quicker than ever, thanks to preparing a fresh batch of overnight oats the night before.
Blueberry Greek yogurt, raw oats, almond milk, & chia seeds (mixed together and refrigerated overnight) topped in blueberries with a side of coffee
Overnight oats are a great way to enjoy oatmeal ready and waiting for you when you wake up. I was first introduced to them years ago by following Julie‘s blog, and she did a wonderful job explaining exactly how to make them.
It’s no surprise that the oats kept me full until the late-morning. They tend to do that! When I eventually wanted a snack, I wandered over to the pantry and found a bag of pistachios I completely forgot about buying from months before. Score, because those roasted and salted nuts are money.
Paired with a few slices of mango, I had myself a tasty, satisfying little snack!
Lunch didn’t come too much later yesterday. I was ready to dig into the leftover crock pot honey garlic chicken I made a couple of nights before, and I quickly created a salad similar to one I made Monday night!
Spinach, cucumbers, tomatoes, green peppers, sliced hard boiled eggs, feta cheese, and shredded honey garlic chicken topped in ground pepper and Greek dressing
And then I got into one of my favorite snacks a few hours later… yum!

My normal evening 1-on-1 client ended up having to reschedule, so I spent the afternoon getting some extra things done around the house and writing my afternoon blog post.
Thanks to summer travels, my night class load lightened up too, and I only had one small group training class on my schedule. I had Scott meet me back at the gym afterwards around 7 p.m., and I put together a strength training circuit for us to complete.
It was a good one (I will be sharing with you later this afternoon), and we finished our workout with a 4-minute jump rope tabata.
Whew!
Scott has been on an extreme fruit kick lately (asking for fresh fruit or smoothies for dinner), so I knew I was on my own for something warm. I was grateful to find leftover green beans and corn on the cobb in the refrigerator, and paired it with a quinoa burger and side of tomato slices to round out the meal.

It was close to 9 p.m. by the time I cleaned up dinner and settled in for the night. I spent the majority of it on my laptop while we relaxed with an episode of America’s Got Talent.
I also enjoyed this dessert for the third night in a row!

• What is one (healthy-ish) snack you love but haven’t had in a while? –I LOVE to throw some grapes in the freezer and then eat them after they are froze. It’s a great little snack!
• What is your favorite go-to crock pot recipe right now? Navy bean & ham soup! I recently did ribs in the crock pot and I gotta say they turned out really well.

Mmmm I love Mango salsa! Your lunch salad looked delicious as well. I’ll have to try out that crockpot chicken sometime this fall when I finally bring out my crockpot again! Thanks for sharing!

Yes! They’re great to have a round. And, when I’m super lazy, (i.e. the past couple of weeks) I just buy the resealable bags of them to have handy. Love it!

One of my favourite snacks is banana soft serve made from blitzed bananas! I havent had in in a while, not because of choice, just hard to do when you are moving to the other side of the world! Haha!
