Happy Hump Day! Wednesdays are pretty awesome in my book. Not only are we halfway to the weekend, but I get an excuse to dedicate an entire post to what I ate in a day. Usually Tuesdays.
The best part? You guys seem to like it, so I am going to keep rolling with it as long as Jenn keeps hosting them. So, here we are…
What I Ate Wednesday Tuesday #26
Breakfast happened as soon as I came downstairs to let Roadie out. I was hungry and finally in the mood for a big egg white scramble again. While prepping for our calendar shoot, I kind of got over the egg whites.
Yesterday, they made their return with the addition of green peppers, tomatoes, and kale (<- a first in eggs for me!) to get the day goin’.
It was delish!
After eating, I quickly took advantage of a little “coffee time” and enjoyed a few minutes of quiet while Scott got ready for work.
Fall has certainly made it’s presence here. Temperatures have dropped into the 50s and 60s, which feels great now that the sun is also showing it’s unfamiliar face. I really wish I could just sit outside on our porch all day and soak it in.
Apparently, I’m not the only one who feels this way, either…
I don’t know what they saw out there, but Aspen and Cali spent fifteen minutes like this. Frozen with matching head movements for a good while. I love when they do that.
It wasn’t long before my fruit cravings hit me again. We have a ton of it in the house this week, and I am doing my best to use it while Scott’s away.
My mid-morning snack was a sliced red apple, which seems boring but tasted refreshing.
Just before Noon I took a scan of the refrigerator to see what I could scramble together for lunch. Lucky for me, there were plenty of leftovers. First up was the rest of the Healthy Sloppy Joes from the weekend!
(With a side of baked beans and a whole wheat deli flat bun.)
Along with the sunshine, my appetite has proven to make a comeback as well. I could have snacked all day, but tried to control myself knowing we have a costume photoshoot coming up this weekend! A peach it was.
Followed by a Designer Whey chocolate protein shake because I was still hungry.

I had an eventful evening planned at the gym and knew I would regret not eating dinner before hand, so I returned to the refrigerator at about 5:30 p.m. to see what I could round up.
Three cheers for leftovers again! This time it was the rest of Scott’s lamb kebabs and mixed vegetables from dinner the other night.
Finally full and satisfied, I arrived at the gym right on time to sneak into Fitness Pilates. Oh, and Good News! I finally bought my own yoga mat.
I got it for $15.99 at TJ Maxx last week and have already used it plenty.
While I was probably the only one to bring my own to Fitness Pilates, I had plans to also take Hot Vinyasa Yoga afterwards and knew I wouldn’t be alone there. Both classes went really well, and I am so glad I have gotten back into yoga again. My body is thanking me!
On my way out of the gym, I knew I would want to devour anything in front of me when I got home. To avoid this, I carefully thought of what actually sounded good and was somewhat healthy, since it would be close to 10 p.m. after I showered and was ready to eat.
Dinner #2 was a good sized bowl of Kashi GOLEAN Original cereal topped in fresh berries!

It hit the spot and I went to bed about an hour later feeling great. Between two left over meals and two different group fitness classes, I guess you could say that this WIAW revolved around double dipping. Nothin’ wrong with that!
Okay, guys. Time to get my day started. I have some running around to do in preparation for this weekend’s activities and photoshoot! Hope you all have a wonderful rest of your day!

Back in Orlando you could often find me in Group Power and then Kickboxing directly after. I loved the combination of strength and cardio and always left feeling sweaty and accomplished.
These days, I have really been enjoying Fitness Pilates and Hot Yoga. Last week I made the mistake of taking yoga first and learned that lesson real quick. Always, always end with namastes. 😉

I absolutely love leftovers. I cannot stand wasting food and leftovers are always perfect for busy nights when I don’t have time to put something together. Sometimes leftovers are even and almost better the next day. 🙂

I used to take back to back classes a lot but now I’m waaaay too busy to spend that much time at the gym. Although, if I had the time I probably would!

What gym did you go to in Orlando? I go to Barre 54 (love it!) But I want to mix things up with different group classes. I tried hot yoga a few times, but both times I ended up with a weird whole body rash that lasted about a week…I guess my body didn’t appreciate the extreme temps?? Not a good look…

I usually take back-to-back classes on Mondays and Thursday, but they are “express” classes and are only about 30 minutes each.
