Hello! I hope you are doing well on this summery Hump Day.
This week, Scott and I have been making an effort to go to bed earlier in order to wake up earlier. It’s been going relatively well, with the exception of this morning. I think I might be coming down with something, because I woke up with a sore throat, a cough, and an achy body.
I had big plans of publishing this post well before lunch time, but hey, I guess at lunch time will have to do. Either the allergies are different up here or… I’m just getting old. Both of us roll out of bed congested, sore and in some kind of pain every day. It’s nuts!
But enough about our first world problems. I’m ridiculous to even complain here. In an attempt to kick whatever is trying to get me down, I’m upping the Vitamin C intake and trying to get as much sleep as I can. Hopefully that does the trick!
Jumping back on the What I Ate Wednesday train, this week I have a full day of Tuesday eats to share with you, along with some random thoughts thrown into the mix. (Isn’t that always how it goes?) You know you love it.
What I Ate Wednesday Tuesday

I’ve been back on an oatmeal kick again.
Breakfast was a popular one this week sided with a “fancy” coffee, thanks to a milk frother my mother gave to us.
Nature’s Path oatmeal (hot cereal) topped in fresh berries.
Throughout the day, I had a small jar of Red, White, and Blue Almond Mix nearby to snack off of.
It’s kind of addicting.
So is this cucumber lemon water I’ve been refilling constantly!
I had an appointment at the Apple store at 12:30, so I got ready and went to the kitchen to throw something quick together for lunch.
Simple Truth Mediterranean Quinoa topped with rotisserie turkey, sliced cherry tomatoes, and feta cheese.
I don’t know why I haven’t been buying rotisserie chicken or turkey on a regular basis. It makes substantial meals come together quicker than ever!
I spent the next couple of hours running around town and stopped by Scott’s office to scan some documents. Our Cannon printer is fully capable of doing that sort of thing, but somehow I can’t figure out how to make it work. I swear I’ve tried everything. When Scott does it and even shows me how he does it, it works. But when I’m alone and complete the same exact steps, it freezes. I’m convinced that our printer/copier/scanner hates me.
Anyways, I returned home right around 2:30 p.m. to hop on a call with a friend of mine who helps me with the blog on the back end. I also enjoyed a crunchy braeburn apple.
I’m so grateful to have him as a reference, but every time I talk to him I have a list of twenty more to-do’s I want to get done immediately. This growing blogging adventure is always a work in progress my friends!
While on the computer, I had a few more handfuls of the patriotic almond mix and before I knew it, it was time for me to get ready to celebrate a friend’s birthday for dinner.
I hopped in the car and took a package of Fiber One fruit snacks with me.
We met at a local bar to be able to watch the World Cup and I just had to get a hard cider.
I picked that over the birthday cake and attempted to keep it “healthy” by ordering a spinach, bacon, and egg salad.
Not too shabby for bar food, right?
We didn’t stay too long after the game ended (we still love you, Team USA!) and Scott and I went straight home.
I tidied up around the house for a while and when I was just about to take a shower I got the urge to go for a run outside instead. I still can’t get over how late the sun stays out these days!
By the way, I finally figured out that the white swans that are always by this tiny lake are not real. Ha! It only took about two years for me to catch on there. The ducks, on the other hand, I believe are alive and cute as ever.
I grabbed Roadie and set out right around 9 p.m. for a sunset run. I didn’t know how long we would run, but soon realized he was loving it and kept him out as long as he was able to keep up.
He seems to do much better when the sun isn’t beating down on us, so I took him through the “short loop” through the trails.
He kept pulling me the entire time, so we just kept running. As we made our way back to our subdivision, I realized we were going to break Roadie’s long distance run record! I’m so proud of him for completing 4.5 miles!
It’s amazing how much the weather can affect our runs. It was perfectly light out without being sunny, and just the right amount of breezy in the low 70s. I’ll take that any day!
We came back inside and went straight to the showers. Finally, I came downstairs and made myself a fruit and yogurt smoothie.
Raspberry Greek yogurt, strawberries, blueberries, banana, and almond milk.
It was good, but I should have definitely added ice to make it thicker and colder. After the smoothie, I foam rolled for a good ten minutes and went upstairs to call it a night. I think all of us were pooped!

Today I opted for Scott to take the car so I was forced to stay home and get some things done, including studying. You guys… I am SO behind. I started out really strong there for a minute, but the craziness of summer outings and travels have done me in. Time to get back to my schedule and hunker down.

Everything looks delicious! By the way, how are the Fiber One gummies? I saw them in the store and contemplated buying them but decided not to since Fiber One bars don’t always do the best things for my stomach.

They are great! I don’t buy or eat fruit snacks very often, but figured if I am going to eat them, they might as well do something for me… like provide fiber. I’ve really been enjoying them!

I stopped using a scanner after discovering an app called genius scan – just snap a pic of your doc/image and it will create a scan for u which u can save as any file extension (pdf, etc), then u can upload it to dropbox, email, mms etc.

I make a peanut butter chocolate smoothie with one tablespoon peanut butter, half a cup of milk, a scoop of chocolate protein powder and some spinach. So so good.

Your lunch looks delicious! And totally reminds me that I need to grab some rotisserie chicken or turkey. You’re right, they make substantial meals come together so quickly! Braeburn apples are my absolute favorite. Just enough sweet and sour with a great crisp crunch! Mmm!
