Good Morning! Hope you’re enjoying the Hump Day.
As soon as I publish this blog post, I’m off to catch a lunch time Fitness Pilates class at the gym. Just like the good ‘ol days! I used to take every Monday and Wednesday afternoon last year, and that slowly turned into Scott joining me for night classes instead.
Well, what do you know Scott made it to class last night and I didn’t.
I was finally in a groove while studying, so didn’t want to break it. The moments of motivation where I actually sit down with my book and make it happen are sadly few and far between these days. I’m working on it!
Speaking of yesterday, I’m here to share all of the eats that took place for this week’s What I Ate Wednesday.

What I Ate Wednesday Tuesday
You might just recognize breakfast, if you happened to stop by the blog yesterday. It was glorious!
A healthy oat and egg pancake topped in agave nectar and cinnamon.
That kept me satisfied until a crunchy braeburn apple appeared as a snack around 11 a.m.
As soon as I finished it, I made a much needed trip to the grocery store. Unless I wanted apples and ripe bananas for lunch, there was a big need for produce and replenishment of food staples in the house.
As soon as I got home and put everything away, I made myself a big monster salad for lunch.
Spring mix, organic broccoli slaw, cucumbers, grape tomatoes, red and green peppers, and Cajun seasoned deli turkey topped in pepper and balsamic vinegar.
As soon as I sat down and started eating it, I remembered I also meant to include cheese. I sprinkled a generous handful of shredded Colby jack and decided I need some kind of flavorful dressing to spice it up next time.
It was good, but it just tasted like something was missing. I’ll have to test it out again with a few ingredient switch-outs and keep you posted!
I also enjoyed some sliced watermelon that was two seconds from turning.
After working on the computer for a bit, I realized I needed to make some sort of banana bread. We had two full bunches of bananas that were more than ripe, so I found a couple of easy recipes and combined them to make my own creation.

I made an extra loaf to pass off to a friend and enjoyed a slice topped in applesauce and cinnamon.
I swear it tastes better than it sounds!
My friend Alex came over around 5:30 to pick up her pup we were watching for the day and I did my fair share of snacking and chatting with her. We started with blue corn tortilla chips and salsa and finished off with a couple of dill pickle spears.
Scott left for the gym and I decided it would be in my best interest to eat dinner early and spend the rest of my evening hitting the books.
It may sound dramatic, but sometimes a one hour class at the gym takes us three hours. We end up talking with people or the instructor, I go to the cardio machines while Scott plays basketball, then we usually go to the hot tub to recover our muscles, shower, and by the time we get near the exit become incredibly hungry and it’s close to 9 p.m.
Instead, I let him do his thing and I heated up leftovers from Monday.
Whole wheat linguine with Al Fresco Sundried Tomato chicken sausage in marinara sauce seasoned with red pepper flakes, oregano and garlic salt.
This time I added a generous sprinkle of Parmesan cheese and it was great!
I also poured a large glass of organic skim milk… with ice.
I know. I’m a weirdo. I like my drinks that are supposed to be hot HOT and drinks that are supposed to be cold COLD.
Before I knew it, the sun was setting and I went upstairs to a quiet bedroom and studied every major muscle group in the human body. I had some help from all three furballs and had to laugh when I left and returned with a snack to Aspen making herself at home on my book.
1 mini-bag of Smartpop popcorn topped in a big handful of Scott’s seasoned popped popcorn. (Hehe)
Cats always seem to love notebooks, bags, and anything you’re trying to organize or study on the bed or floor. It’s the funniest thing!
I closed the books at about 11 p.m. and joined Scott and our friend Adam who is staying with us for a couple of weeks downstairs to watch a new show on FX, The Strain. I’m not sure how I feel about it… we made it about half way through the hour and a half episode before all of our eyes were closing. It’s pretty creepy.
Also, I dove into a couple handfuls of Baked Cheetos. Because I’m ridiculous, and apparently snacks are my thing. I’m embracing it.
And there you have another edition of WIAW. Time for me to get out of here to get in some cardio before class. See ya later!
Question of the Morning
• What is a strange meal or snack combo you have enjoyed lately?
Besides the applesauce on top of my chocolate peanut butter banana bread, I always find myself eating strange but good food combos. Lets see… pickles and cottage cheese is a great example, and so is almond butter on cereal. Or how about adding spinach and/or veggies to any type of sauce or pasta I make? I’m sure there’s more but I feel like strange to most people isn’t strange to me!

Haha I’m the same way with hot/cold beverages, glad I’m not the only weirdo. 😀 Cold coffee? Bad bad bad. Iced coffee? Best ever lol.
Ha, exactly. Cold coffee HAS to be iced and chilled or it’s just not worth the trouble. 😉
I aaaaalways snack. It doesn’t even matter how big a meal is, going 7+ hours with no food is just totally impossible for me. 🙂 And room temperature coffee…don’t even get me started.
I fall asleep watching shows that I start at 9! The strangest food combo lately has been Graham crackers spread with strawberry-chia jam with cheese. Strange, I know 🙂

Everything looks yummy! I never thought to put ice in my milk. I’m really curious what that tastes like now!
Ha, I don’t really notice it now… I’ve done it for so long! Not always, but sometimes. I’m so weird! 😉
I have to make your recipe for chocolate pb banana bread – it looks amazing, especially topped with applesauce!
I don’t know if this is ‘strange’, but a meal combo I’ve been enjoying lately is a whole wheat or cinnamon raisin bagel topped with plain greek yogurt and apple pie spice. I honestly think it tastes better than cream cheese! I also love dipping apple or pear slices into greek yogurt.
Oh my gosh, I add almond butter to cereal and my roommates laugh at me! Good to know I’m not the only one.
I’ve never thought of putting Greek yogurt on top of a bagel. I don’t know why, since I use it on waffles all the time. Great tip!
I used to put chalula (I’m sure I spelled that wrong ha!) sauce on my popcorn! I quit doing it when I got pregnant and my taste changed, but I got a lot of funny looks for that one!
If you don’t mind me asking, what camera do you use? I look at your posts every week and am always so stunned and blown away w/ how perfect and lovely each picture looks.
Oh my goodness… that’s so funny. Thank you! My camera is so old and busted. I need to upgrade badly, and to be honest the only reason they look presentable is through editing. I use PicMonkey on almost every one! But, for what it’s worth, I have a Cannon Powershot. I’m not sure of the specs or model because it’s so faded. We bought it about 5 years ago!
Also, a LOT of pics you see on the blog are taken right from my iPhone! And then I edit those as well.
