Hello! Today I am jumping back on the What I Ate Wednesday train.
I know a lot of you like seeing these posts, so I have to preface this edition with a disclaimer… it’s nothing special. In fact, my meals were very thrown together and jumbled together yesterday.
I went to bed full, but I know I could have done a much better job at getting in more fruits, proteins, and veggies… and I don’t know, maybe something other than soup for a substantial meal?
I guess it happens.
You’ve been warned. Here we go!
What I Ate Wednesday Tuesday
I wasn’t super hungry for breakfast, so I settled on a big cup of coffee and a sliced up honeycrisp apple. I normally like to dip apples in some kind of peanut or almond butter, but I just wasn’t feeling that either this time.
A small breakfast it was!
That did the trick and held me through working on the computer for a couple of hours. After I finished blogging, I had a couple of administrative tasks to take care of for the new job and before I knew it, I had ten minutes to get out the door.
Lucky for me, I have a solid collection of Amy’s Kitchen soups on hands at all times. I know… I always talk about Amy’s. These frequent mentions are not sponsored in any way, and I simply have a true and meaningful love for the brand. Amy and I are pretty close y’all. I see her quite often.
This time it was a can of minestrone over leftover rice to scarf down for lunch on the way to training!
I wanted to put together and complete a new workout when I got home around 4:30 p.m., but it just wasn’t in the cards. I promise that I am trying to get more workout material up for you guys!
I quickly put together my latest race recap and snacked on a hearty helping (or five) of sweet potato & sea salt triscuits dipped in hummus while I typed. Yep… that is exactly why I insist on using a keyboard cover. Classy.
I knocked out my post and had just enough time to change and head out to the area for the Pistons vs. Lakers game. I got there in a hurry and was sad to see another loss for our team. We get so close to a W every time! Hopefully things change soon.
By the time I got back to the car, it was close to 10:30 p.m. and the last thing Scott and I wanted to do was go out to dinner. We were both pretty hungry, so Scott and I met at home, he heated up leftovers, and I made anything I could find that somewhat remotely made sense.
I went for the same loaded sweet potato I shared last week, but it just didn’t turn out the same this go around.
Sweet potato topped in spinach, Amy’s chili, and Parmesan cheese.
It may not have looked a great, but it tasted good and did the job just fine. I finished it off with a tall glass of dark chocolate almond milk and called it a night soon after!

When I got my new computer last month I knew I had to get a keyboard cover because I do the same thing! I’m often working on something blog related, or homework related, so eating and working just go hand in hand 🙂 haha.

This one actually slips and slides around, so it’s kind of annoying… but it’s definitely worth having to save my keys from food! Ha.

We ALL have days like this. Finding balance with nutrition is hard but I think you have found it…I am sure over the next couple days you will eat more protein, fruit and veggies. Our bodies don’t just listen to what we feed it hourly but more the weeks and months that add up!

I must live under a rock because I have never heard of a keyboard cover. After getting butter on mind the other day it might be something I shoud look into. 🙂 Amy’s is a great brand for quick dishes. I also am a big fan of eggs if I am hurting for time because they are easy and you can cook them so many ways.

I really need a keyboard cover! I always eat in front of my computer (bad habit…) and my keyboard is always filled with crumbs and it bugs the heck out of me haha

Um, if this is an example of an “off” day for you…I have a lot of work to do! At least you incorporated some fruits and veggies (the apple and spinach and sweet potato). I have days where I don’t eat either! I struggle with getting enough fresh produce, mainly because it’s a struggle to eat salads and raw veggies. I just don’t crave them like some people do. But I’m working on it. 🙂 I’m also slowly getting back to working out, so I look forward to your workout posts! Have a lovely hump day. 😉

Keyboard cover- no way. I currently do not have a “v” key because my dog pawed it off. super fancy. it’s like second nature to copy and paste it. when I get a new laptop, I will be investing in one of those, ha!

I’m all about the soup lately! The chillier weather we’ve had lately makes me crave it all the time. I just made a huge pot of minestrone soup yesterday to eat throughout the week. Amy’s soups are great to have on hand for a quick meal. I also love Trader Joe’s options for soups and other quick meals. And hey, I think you did a pretty alright job in the nutrition department for an “off day”!

That didn’t need to be prefaced! You ate fine! And it’s nice to see meals that are actually a real WIAW. Sometimes you read them and it’s like, who has time to make all that crap?! And who WANTS to spend that much time preparing all their food? So it’s nice to see some thrown together meals. Gives people idea for quick and easy thing to eat- like the sweet potato. Sometimes I post a random meal here or there cause I throw some random stuff into a bowl sometimes and call it a meal, and people have said they like seeing those meals!

I need to check out the Amy’s soups and chili’s. I’m obsessed with soup but usually stick to the Healthy Choice options that are dairy free. I need some new ones to add to my rotation though!
