Happy Hump Day!
This post is coming out late in the day, but I have already knocked out a few projects, a few errands, and a workout class: Fitness Pilates. One of these days, I will share exactly what the class entails. For now I will do my best to describe it in one sentence:
“An hour long total-body conditioning workout that builds strength and lean muscle through stretching and traditional Pilates movements at a fast pace.”
That is my definition… basically Pilates on speed to cool music.

Lately, my Monday and Wednesday mornings and afternoons pan out similarly. Both days usually include a trip to Fitness Pilates with a power meal before and after.
Over the weekend, I like to go to the grocery store and buy a good amount of produce and healthy snacks to get me through the week. To me, it is just important to prep and make the produce easily accessible as it is buying it. If I do not take the few minutes to do it all at once, I will most likely skip over it later on, and might even let nutritious and delicious fruits and vegetables go to waste. I know I am not the only one guilty of doing this, either!
Solution = my Preppin’ Veggies Time.
After each trip to the grocery store, I put everything away except for any vegetables or foods that need to be washed and prepped. I change into comfortable clothes, put some music on, and have at it.
Look at me know… look at me know…. what? I’m preppin’ veggies!
That is my song I sing when washing and chopping produce. It came from a Busta Rhymes parody about making pancakes and it’s wonderful.
*Fair warning: it is not a clean version. It is by Mac Lethal, and he does not play around. Even so, I think anyone could appreciate the speed of this guy’s rhymes!

Prepped Peppers for the Win
Going back to Monday, my breakfast came together relatively quickly thanks to my preppin’ veggies time. I was craving scrambled eggs, and mixed it up by throwing some diced red and green peppers, diced ham (left over from my Slow Cooker Split Pea + Ham Soup!) and shredded cheese into a small skillet.
I then poured about 3/4 cup egg white liquid over top and cooked on Medium-Hi for a few minutes, before scrambling.
Easy peasy!
Wanting to add a bit of a a kick, I drizzled a little bit of salsa on top….
… and finished off the meal with a few cuties.
Cuties are so flipping cute!
As planned, I went to my Fitness Pilates class at the gym, followed it by a quick fifteen minutes on the elliptical, then treated myself with a peppermint protein smoothie.
Around the holidays, a guy working behind the counter at the cafe in my gym gave me a sample of this candy cane concoction. He had no idea how much I am obsessed with chocolate + mint, and I told him he better be prepared to make it for me on a regular basis. To my surprise, I completely forgot about it until the other day and haven’t stopped thinking about it since!
I need to find out what is in it and what kind of protein powder fuels it because was yummmy.
Post-gym and post-smoothie, I got home and still wanted something to snack on. This was the second time I appreciated my prepped veggies waiting for me in the refrigerator!
I lined up all of my favorites with a big ‘ol dollop of Garden Fresh Gourmet Spicy Cilantro Hummus. It was a great rainbow looking plate if you ask me.
Since then, I have used the same ingredients for salads, sandwich wraps, and even in more scrambled eggs. Prepped veggies for the win!
