For those who celebrate, I hope all of you had a happy Cinco de Mayo!
We sure did… and I can tell you Roadie isn’t the only one who seems to be dragging this Monday morning.
Why yes, that is a cat bed and it doesn’t seem to bother him that his entire lower half is hanging off of it.
Reason #2,167 why we love him.
Banana Peach Protein Smoothie
Saturday started off promising with a good hour of housecleaning and laundry. I like to knock out the work I have to get done early in the weekend, just in case anything fun pops up for us to do.
I had plans to go for a late-morning run, but the temperatures have quickly crept up to the nineties here in Orlando. Now that it’s May, I can kiss any kind of outside run later than 9am goodbye… unless I want to have another uncomfortably hot Red Run.
I’m good on that. Today, I’m hitting the pavement as soon as I post this.
Around lunch time, Scott and I both were craving something fruity. We had plans to get dinner later on, so he suggested we hang light with a banana and peach smoothie. Great idea!
We gathered ingredients as a team to create my absolute favorite homemade smoothie yet. I might say that a lot, but that just means I’m getting better at putting random ingredients together, right?

I can take credit for the peach yogurt and protein powder, but the idea of adding cottage cheese to the mix was all Scott.
If you’ve never experienced cottage cheese in a smoothie, I urge you to try it. I just couldn’t get enough of it.
I love when that happens.
Cinco de Celebrations
We had a fantastic rest of the weekend. I got to spend the majority of it celebrating Kelly’s brand new bling!
I have known both Kelly and her fiance, Jeff, for five years now.
Scott and I were at dinner on the opposite side of town and had plans to meet up with them later on. When I heard the news as we were walking out to the car, I instantly became antsy – like a kid waiting to open presents on Christmas morning. I couldn’t wait to get over there and hug them both!
There they are… CONGRATULATIONS Kelly and Jeff!
We spent the rest of the night toasting, celebrating and dancing the night away.
Nothing Done Sunday
I didn’t get too much done yesterday afternoon. Sundays are normally reserved for church, straightening up, grocery shopping and spending time with my family. Although I didn’t see my actual family, Scott and I spent the entire day with people who are close to it.
We met up at the tail end of brunch celebrating a dear friend’s birthday. When everyone started going their own ways, someone mentioned grabbing a mimosa at Dexter’s in Thornton Park and I was in.
They have a great variety of different flavors, and I was happy with my choice of Mango.
Everyone else had eaten already, but since Scott and I hadn’t, I took this opportunity to create my own omelet.
It was similar to last time, but I changed it up a little ordering egg whites, ham, tomatoes, and bell peppers with a side of grits. The omelet was great, but their grits were nothing short of addicting. I don’t order grits that often, but I’m now marking it down as a must here.
We spent the rest of the day watching the NBA Playoffs and taking a load off. I hate Monday mornings when I don’t do much around the house the weekend before, but gosh I just love those type of Sundays.
Off to run, before it gets too late to beat the heat!

I’m a big fan of cottage cheese on top of baked potatoes- both white and sweet. Throw some steamed broccoli in there and you’ve got a great light meal. 🙂
