Hello, hello! Gosh, Monday sure snuck up on me this week. Could anyone else go for an extra day of rest?
I hope you all had a great weekend filled with quality time with loved ones and celebrations. That is exactly what ours was all about!
Unfortunately, I don’t have much time to chat on the blog today. I’ve got to get going on a busy day working on projects, at the gym, and attending events later tonight. This weekend was awesome, so I couldn’t go without documenting it. It was a great Easter Weekend indeed!
Friday
Friday went by in a flash. I worked at home until late-morning and then took all three pets into the vets for their annual appointments. I always divide it into two separate appointments (Roadie, then the cats), but it still takes a lot of corralling and stress to get them there and make sure everything goes smoothly.
The good news is, the fur babies are all clear! They’re happy and healthy. Well… Aspen was anything but happy at the vets, but she seems to be just fine now. I could hear the poor thing crying and crying while she was getting her shots in the back. The vet came back in with her wrapped in a blanket and muzzle! I felt so awful. Poor baby. She just wasn’t having it that day.
Anyways, after the Hesington Brigade left the vets, I only had a minute or two to drop them off, get them settled, and head to the gym for an afternoon training session. We had the back door open, as the weather was beautiful! I really enjoyed it.
As soon as I got home, I started chopping and cooking one of the dinners I received from Blue Apron.
I’ll be sure to share my full experience with the meal delivery service later this week.
This dish was chile-blackened cod with epazote, avocado, and red rice salad. It had a bitter flavor from the grapefruit, but I loved it!
As soon as I finished cleaning up, I hopped in the shower and got ready for a worship service at our church.
It was put on by our young adult community and was absolutely amazing. The majority of our bible study sat together, and we had the best couple of hours listening to stories about Good Friday and worshiping through music.
After service, a big group of us went out to Bar Louie for a late dinner. I wasn’t too hungry, but I ordered a bowl of chicken tortilla soup for good measure. Holy cow, it was bigger than my head! It was very fresh and delicious, just enough for a family.
Scott caught up with us after driving back across the state from an event, so we got home pretty late.
Saturday
I planned on getting up early for a long run, but I chose to catch up on some sleep instead. It happens. Scott left for work around Noon, so I had the day to catch up on some work on the computer.
I made another Blue Apron meal for lunch, which ended up taking over an hour and a half. I did’t expect that! Sadly, I had to skip my run (again) and get ready for dinner at Union Woodshop with a group of our friends to celebrate Alex’s birthday!
I just love that place. Located in the charming city of Clarkston, Scott and I like to take out-of-town guests here for a unique dining experience with excellent barbecue. You can check out one of our previous visits here!
I know it’s silly to say, but their salads and flatbreads are fantastic! When I don’t get one of those menu options, I get a meal with pulled pork or chicken and two sides.
This time, Alex and I got the same meal (pulled pork) with sweet potato mash and then split the macaroni and cheese and seasonal vegetables. Oh my goodness, you have to try both the mash and mac and cheese if you go. Trust me!
We ended up spending the entire night at the Woodshop, since we could watch the NCAA Final Four games from our seats. Although MSU didn’t advance into The Finals, it was fun to watch and get into the games.
Sunday
Our Easter Sunday started later than normal with a 10:45 a.m. service at our church. I wasn’t complaining!
Afterwards, we attempted to take our annual Easter photo with the Alexes. It’s completely ridiculous with Easter bunny ears, and somehow Scott always makes it creepy. We just let him go. This picture leading up to it captures it perfectly.

Since neither Scott or I’s families live close, we were taken in by Alex’s family’s house for Easter dinner. We are so lucky to have such great friends in the area.
Everything was so festive and cutely assembled.
We had a delicious spread of pork tenderloin, potatoes, asparagus, kale salad, and the best broccoli salad I’ve had!
I just might be able to ask her mom for the recipe. I’d love to recreate it at home!
After dinner, we celebrated Alex’s birthday with a homemade blueberry lemon cheesecake. It was also delicious!
Alex’s niece, Harper, helped him blow out his candles. It was so cute!
We had a great Easter, and although we missed being close to our families, we found comfort in the home of friends in Michigan. We are so grateful! <3
All right. I’ve got to get going. I won’t be able to check back in today, so I will see you all back here tomorrow morning.

Blueberry lemon cheesecake?!?! That sounds fabulous! Glad you guys had a nice Easter weekend! It’s so nice to be able to celebrate with close friends. We were blessed to have good friends in Utah that took us in each Easter, and I was always so thankful for that.

I’m not a huge salmon fan either… but maybe I would like it blackened! I’ll have to give it a try one of these days. 😉
