Good Morning! Scott and I are currently starting our week off entertaining and being equally entertained by a whole bunch of enthusiastic summer camp high schoolers. I have every intention of checking back in this afternoon with stories from the weekend, because we have been having an absolute blast here!
Until then, I have a series of guest posts to hold down the mornings on HWG, since our schedules are all over the place and not always predictable. I plan to catch up with you guys in the afternoons, if time allows, but I can’t promise any type of consistency there. Scott’s family just arrived at camp last night, so we have a lot of extra catching up to do in our scheduled free time.
The mornings, however, we’ve got you!
First up is Hillary, a fellow healthy living blogger I love to keep up with. She’s great at putting unique and good-for-you recipes together, so I asked her to pull some of her summer favorites to share.
And oh yeah, they’re also gluten-free. *Double-Triple Bonus Points*
(She’s got me drooling over here!)

Hey there, HWG readers!
I’m Hillary, the girl behind Nutrition Nut on the Run — a blog dedicated to pursuing a healthy life via delicious recipes, energetic workouts, and a positive perspective.
Today I am returning the favor to Miss Heather who guest posted on my blog last fall — her outdoor workout is perfect for the summer months, too!
Now that it is officially summer — hooray! — fresh produce is in abundance, which means lots of light, colorful meals. Wandering the local Saturday farmer’s market is my favorite summer ritual. Every weekend, I enjoy stocking my kitchen with $1 bunches of fresh basil, juicy peaches, and glorious green zucchini.
Here are 5 simple summer recipes that are aesthetically pleasing, nutrient-dense, and gluten-free:
1. Peach Coconut Almond Meal Muffins
Ideal for mornings on the go when it’s too hot for a bowl of oatmeal.
Freeze well!
2. Summery Salmon with Apricot Peach Salsa
Impress your guests with this easy salmon dish.
Made with gluten-free pasta, this recipe won’t weigh you down.
Lemon adds that burst of summer flavor!
4. Edamame, Avocado & Corn Summer Salad
A no-cook recipe. Great for potlucks!
Perfect for an outdoor BBQ. Surprise your friends with this unique combo of ingredients.
Thanks for having me today, Heather. I hope you stop by Nutrition Nut and say hello soon. Happy, healthy summer eatin’!

That one looks delicious! I might have to give it a try myself 😉
