Hello, and Happy Hump Day!
Let’s celebrate by diving right into another edition of What I Ate Wednesday.
I’m so happy to hear that a lot of you like reading these. I hope you enjoy the absorbent amount of food pictures, and if not, you can check back in later this afternoon.
(Still wondering what the heck WIAW is all about? This post explains it all.)
This edition covers my whereabouts yesterday, which includes a trip to Qdoba for lunch and leftovers for dinner. No two WIAWs are ever the same, that’s for sure!
What I Ate Wednesday Tuesday
Breakfast happened as soon as I could get downstairs, turn on the coffee maker (I always get it ready to brew the night before… obsessed much?) and to the refrigerator. Our house is currently bare of groceries, so I grabbed the last of our yogurt cups and topped it with anything that made sense!
Purple Cow Light Blueberry Yogurt topped in Super Oats, , and strawberries
That did the trick for a bit, but I went back to the fridge to look for a snack a few hours later.
Sliced red and green peppers with red pepper hummus
I spent the entire morning and early afternoon on the computer followed by a little bit of time with Scott before we had to leave to drop him off at the airport. The lucky duck is currently working on a freelance consulting job in Paris! I’m not jealous or anything. *lies*
We live about an hour from the airport, so we left with plenty of time to allow for traffic and for me to get there and back before my 5:00 client at the gym.
Oh, and we both forgot to eat lunch, so a quick stop into Qdoba was an obvious answer. I ordered a salad and had plenty leftover to enjoy later.
Qdoba salad with brown rice, black beans, chicken, pico de gallo, and corn salsa
I went straight to the gym after the drop off and was already digging into my snacks I brought for the night. What can I say… I’m a snacker.
Blue Diamond Sea Salt Almonds and a sliced honey crisp apple
I arrived early enough to create my workouts for the rest of the week, and I had a great client session followed by a small group circuit class. Tuesday nights have been slow this summer, so I only taught one class before getting around to my own workout.
I didn’t feel like putting another workout together, so I took a look at the white board and went for the Rockit Class I taught Monday night.
Here’s a quick glance at the exercises:
medicine ball (overhead) slams
stability ball bent leg bridges
The forty reps were the hardest for me, but it was a good one! I finished in just around forty minutes and kind of sat here for a while afterwards.
While I’m not really tracking calories and whatnot (especially over the last year or so), I would be interested to see how many calories I burn on these types of workouts. If I had to guess, I would say somewhere in the 300 – 400 range. If I ever remember to track a few, I’ll let you know!
I headed home soon after and dug into the rest of my leftovers from lunch. I also had a few servings of blue corn chips and salsa to dip into it. The picture turned out horrendous, so I’m just going to move onto dessert…
Rice cake topped in peanut butter and semi-sweet mini chocolate chips with a glass of organic skim milk
I was craving chocolate and this was the best I could do. As it turns out, the combination was fantastic. It will be repeated without a doubt!

And there you have another full day of eats for WIAW. As you have probably picked up on, no two weeks are exactly the same, so I like putting this recap of meals together every now and then.
I’m planning to pop back in later this afternoon, so I’ll see ya back here in just a bit.
Have a great Wednesday!
Questions of the Morning
• What is a healthy snack you turn to when craving something sweet at night?
• What do you usually order from a place like Qdoba or Chipotle?
You can always find my latest What I Ate Wednesday posts by exploring the “WIAW” category on the right hand sidebar.
Please note: What I Ate Wednesday features an entire day of my unfiltered eats. In no way do I change what I eat just for the sake of documenting it. While I try to be mindful with portions, I don’t count calories. I do, however, take into account how much activity I am going to be doing that day, and I plan my meals and snacks accordingly.

The workouts I post are what work best for me and might not be the right type of exercises for you. I always order a naked burrito with chips on the side. Oh and guac
I always order guac too, but figured it would be too messy to eat in the car. It’s so good though!
We actually just made our homemade version of chipotle last night! It’s not too hard to make and is extremely close to tasting like the real chipotle.
I’m more of someone who craves salty snacks. The rare times that I do crave something sweet I love to make a smoothie that has banana, pb2, cocoa powder, and fat free skim milk.
Yum! We do that from time to time either with leftover chicken or even ground turkey. It’s so addicting!
Oh man, I’d be so jealous if my husband got to go to Paris for work! I’m going to San Diego next week without him, though, so he’s pretty jealous right now.
Mexican salads are so good. I work across the street from a Moe’s and always order a burrito bowl with every veggie they have and pile on the salsa.

Right? My hopes are to tag along with him (and pay my own way, of course) next year. I wouldn’t mind being left to explore on my own while he’s away! 🙂
I’m all about the burrito bowls or salads loaded with alllll the toppings! As for a healthier evening snack to satisfy those sweet cravings … usually I’ll turn to a “healthy” mug cake, small bowl of cereal, or PB + chocolate chips. 🙂

YES! Hmmm, mug cake is still something I haven’t tried. I need to get on it! Also, PB + chocolate chips sounds amazing. <3
I’ve been going crazy with cotton candy grapes – best night-time snack!

Ahhh, I still haven’t tried those! I actually looked for them the other day and they were nowhere to be found. Maybe next time!
When I’m craving something sweet I also turn to rice cakes w/ PB and chocolate chips, an apple and PB or an apple w/ a dip I make with Greek yogurt and PB. Can you tell I like PB?!?!?!
Unfortunately, there is no Chipotle or Qdoba where I live!! So, I get my fill when we’re visiting a place that has them. I usually get what you ordered or a burrito with so many toppings.
Yum, PB is the best. I’ll never deny a good scoop of it… regular or chocolate. No Chipotle? Ahhh! You’re probably better off without the addiction! 😉
Looks delish! I don’t tend to eat healthy snacks at night… so i try not to snack at all hahaha. because what i WANT is ice cream!
AND man, what a buzzkill, but I don’t really like qdoba or chipotle. I know, i know. If I don’t have another option, I’ll get a burrito bowl… but in general im disappointed with what I order! haha

Oh man, are you just not a fan of Mexican food? I practically live off of the ingredients I get in my orders haha.
I’ve never been to a Qdoba but that salad looks delicious! They must not be in New England.

I’m not sure! I will say that I like Chipotle better, but it’s always an argument with my husband. 😉
I love ordering from Chipotle, and trying to make a burrito bowl semi-healthy. And if they fill it up enough, it’s enough for two meals which is perfect 🙂

They loaded this one to the top, which is the only reason I didn’t put cheese on it. I had a feeling it would take over! If I get chips, the loaded bowls are almost always enough for two meals!
Rice cakes with peanut butter and chocolate chips are one of my favorites! I actually stick mine in a toaster oven for a couple minutes to make the peanut butter and chocolate a little melty and it is so yummy!

I can’t believe I didn’t see or think of doing that before. It was so good! I’ll have to try out your suggestion to pop it in the microwave. That sounds delicious!
When I have a sweet tooth (specifically chocolate) I turn to 72% – 85% dark chocolate, one of my healthy vegan brownies, or a rice cake with chocolate almond butter! 🙂
At a place like chipotle I always order a salad bowl with extra guac + salsa and use chips as a vehicle to eat the entire thing sans fork 😉

Mmm chocolate almond butter is fantastic. I usually keep a bar of chocolate in my fridge, but I’m fresh out! Don’t worry, I usually do the same thing with the chips. It’s how I finished half of the bowl for dinner! (Forks are overrated.)
Don’t get me started on Qdoba. Chipotle for life! 🙂 I am so jealous of Scott! Freelance in Paris sounds like the best gig ever.

Haha, I’m the same way! I have the same argument with my husband all the time. Where we go usually depends on what is closer, but I’m always up for the extra distance for Chipotle. 😉
A new Qdoba just opened in my area! It’s great!
I am so out of the loop, I have not been to Chipolte yet….soon I promise. Sour patch kids are my snack lately, I know I know. I have been running a lot more lately so my sweet tooth is kicking up a bit.

I like a couple bites of dark chocolate.. i sometimes have dove dark chocolates on hand and one of those works perfectly! I like the combo that you threw together.. i LOVE PB!
I basically get EXACTLY what you get at chipotle/qdoba. sometimes i will throw in a hotter salsa. My BF has never been to either place despite his love for mexican food and it fascinates me!
Hi Heather! Too bad you didn’t get to go with Scott this time … didn’t you tag along on his last European adventure? Anyways, nice work on the eats. I’ve never had Qdoba before I don’t think, but a tasty burrito bowl always sounds good to me. 🙂 Happy Wednesday!
