Happy Hump Day!
It’s been over a month since I’ve shared a What I Ate Wednesday, so I figured we are more than due for recap of eats. I hope you enjoy reading about what a day of eating in our household looks like, and if not, you can check back in later this afternoon.

What I Ate Wednesday Tuesday
My morning started off on a “late” note by snoozing through my alarm. Several times.
I have been making a solid attempt to draft the majority of my blog posts the night before they go live, but I just wasn’t feeling it Monday night. Instead, I set my alarm for 5:10 a.m. to make sure I had plenty of time to put my Weekly Workouts post together before leaving for work.
Yeahhh. That 5:10 a.m. wake up call quickly turned into a 6:50 a.m. force-myself-out-of-bed call, and I barely had time to gather my thoughts and proofread before getting ready for work in record time. (#fail) I did, however, make sure to kick my morning off on the right note with a hearty breakfast as soon as the coffee finished brewing. (#win)
Nature’s Path Pumpkin Raisin Crunch cereal, almond milk, a scoop of Buff Bake protein peanut butter & half a sliced banana with my morning coffee
Yup, that’s pretty much my favorite cereal you will currently find in our pantry at all times. I’m totally the weirdo who stock piles boxes when I find them, and would admittedly eat it all year long if the flavor was available! Ahh, pumpkin. You rock my world on so many levels.
Anyways, Scott dropped me off for my morning shift to work the day care at 8:45, and I spent the next three hours corralling 1 and 2-year-olds. They’re a sweet and lively bunch, that’s for sure!
Like clock work, Scott picked me up at 11:45, and I was more than ready for lunch when we returned home thirty minutes later. I guess I should consider bringing a snack for myself when the little ones dive into their piles of Cheerios during snack time?
Scott put a couple of sandwiches together while I took Roadie out for his afternoon walk.
(In case you’re wondering… he’s still between jobs. It’s anything but “normal” for him to be home with me all day, every day!)
I asked for a half a sandwich using one slice of bread since I knew I wanted a side salad to go with it.
Sandwich: cracked pepper deli turkey, Havarti dill cheese, and a sliced pickle on marble rye bread (open faced) // Salad: Romaine lettuce, cucumbers, red, green, and yellow peppers topped in fresh ground pepper and a raspberry vinegar dressing
It hit the spot!
Before long, I was found myself wandering over to the refrigerator and came back with one of my favorite snacks.
Low-fat cottage cheese topped in a sliced honey crisp apple and cinnamon (Yum!)
I spent the next few hours working on the computer, ran to the gym to train a client, then came right back home to cook dinner. I usually teach small group classes on Tuesday nights, but I had the night off and took Scott with me to take the 8 p.m. Rockit class instead.
I knew we wouldn’t want a heavy dinner when we got home around 9 p.m., so I went to the refrigerator again and found inspiration for an earlier dinner (for us) around 6:30 p.m.
SamMills Pasta Salad with Al Fresco Italian Chicken Sausage topped in grated Parmesan cheese
The Italian chicken sausage and Italian pasta side (split as two servings for entrées) was a great combo, and I loved that the pasta was gluten-free, wheat-free, and Non-GMO!
Our dinner sat for a little over an hour before we left for the gym, and we had a hard and sweaty class after some foam rolling.

I had been fighting off a headache for most of the day, so I hopped in the bath tub to unwind as soon as we got home. I then went down to the kitchen and had the best post-workout recovery dessert I’ve had in quite some time.

I stayed awake long enough to draft this post, and then I turned in for the night by 11:30 p.m. Woo hoo!

And there you have another full day of eats for WIAW. As you have probably noticed, no two weeks are exactly the same. For the sake of displaying a random Day in the Life of sorts, I like putting this recap of meals together every now and then.

That salad and sandwich for lunch look delicious, I miss being able to prepare meals at home now that I work in an office. It’s meal prep all the way for me, so less what I’m feeling each time I eat and more what I have with me.

I used to prep meals like my lunch the night before when I worked in an office. It isn’t always fun to think ahead, but I always loved knowing exactly what was waiting for me on my break!

Yum! Peanut butter is one flavor I didn’t try… it looks like that needs to change. 😉

That fudge sounds amazing! I actually didn’t really realize there were different “flavors” of fudge, but I could also go for some peanut butter fudge. ^^ Anything with peanut butter and chocolate is pretty much a done deal for me.

That sandwich looks INCREDIBLE! Then again… my fiancé and I are in the middle of watching every season of “Friends,” so I can only picture Joey enjoying it, ha!

I’ve never been a huge fan of fudge but if I had to choose one I would say peanut butter! But probably because it is just like eating peanut butter !

Hi Heather! That Buff Bake stuff — it’s dangerous. I could put it on everything hahaha. And I have been! I haven’t had a deli sandwich is far too long and seeing that sweet pickle makes me want one heheh! How nice you and Scott are getting some extra quality time. 🙂 Enjoy it!
