Good morning! I hope you all had a great St. Patrick’s Day yesterday.
We didn’t do too much celebrating over here, but I hope to be able to make that up this weekend. I can’t get some of those Irish inspired meals out of my brain. Must… make… everything…. now. Isn’t that usually how Pinterest goes?
Anyways, I spent my morning networking on behalf of my gym at a community meeting today.
Although the 7 a.m. meetings come early on Wednesdays, I really do enjoy getting out and chatting with other businesses and ambassadors for companies in the area. I just walked in the door a couple of minutes ago, so let’s breeze right into today’s eats! Well, technically, yesterday’s eats for What I Ate Wednesday.
Have no idea what I’m talking about? This should catch you up to speed!
What I Ate Wednesday Tuesday
Yesterday flew by, which is actually the opposite of what I was expecting when I woke up feeling groggy with a head cold. There seems to be a lot of those going around right now, and I fully blame the weather. It’s back in the 20s today. Spring was nice while it lasted, right?
(And a projected snow storm this weekend? Eww. Just when I thought we were on our way up… You’re a tricky one, Mother Nature!)
I finally got around to breakfast a little after 9 a.m. I tried to get into the St. Patrick’s Day spirit by going green and came up with the festive meal you saw yesterday.
Gluten Free Ancient Grains Waffles topped in Key Lime Greek Yogurt, 1/2 a sliced banana, and sprinkle of chia seeds.
That kept me content until lunch, just as I expected it to. With a day off from working at the gym, I took that time to catch up on the computer. I stayed glued to my laptop throughout the afternoon and broke for lunch around 1 p.m.
Spinach, quinoa, tomatoes, diced grilled chicken, and feta cheese on corn tortillas.
(Thanks so much for the tortilla shipment, Olga. They’re delicious and still going strong!)
Feeling a bit on the achy and chilled side, I bundled up with hot coffee, clementines, a scarf, and fingerless gloves on the side of computer work for the rest of the day.
I couldn’t believe how long it took me to work on this graphic! The perfectionist in me spent hours adjusting every single line. Ahhh. I wish I wasn’t so meticulous about those things.
After a while, I dug into one of my favorite snacks, unsalted pretzels dipped in hummus!
I had originally planned to run to the grocery store and make corned beef and cabbage soup in the crock pot for dinner, but those plans quickly fizzled when I finally posted late around 5:30 p.m. I hope to get around to it this weekend instead!
Without much time to spare, I hopped in the shower and got ready for a special green themed Pistons home game. Already hungry for dinner (why I didn’t eat before I left is beyond me…), I was very thankful to find a squished Clif bar on my drive over.
I’m loving the Cranberry Pomegranate Chia flavor!
I arrived to meet a friend right before tip-off and enjoyed watching our team put up a great fight through each quarter. We won and gained our first victory over the Memphis Grizzlies since 2009!
Hungry, I was tempted to order something to eat from our seats, but decided to wait for a “substantial dinner” afterwards with Scott instead. He’s always starving by the time he gets out around 10:30 or 11 p.m.!
Haha! I can’t handle that photo. Just in case you can’t read it, his hat says “I’m a WEE-BIT Irish,” which is completely accurate. Also, I’m not sure who’s hat is better. #stpattysattireforthewin
We considered popping into an Irish pub for an authentic Irish meal, but figured they would all be past the point of a regular dinner menu by the time we got there. Instead of warding off the drunks, I asked Scott what he wanted to quickly grab on the way home.
Without many other options available, he went with Taco Bell. Who am I to stop him? I honestly can’t even remember the last time I drove through one of their windows. I ended up ordering two chicken soft tacos and hoped for the best!
Drizzled in hot sauce, it wasn’t all that bad. Ehhh… you win some, you lose some.
We also dug into the corn tortilla chips and salsa when we got home, and I topped it all off with a large glass of unsweetened almond milk for dessert. So random, yet so perfect.

Kristin
Omg, your lunch looks amazing. Thanks for posting this! Great ideas.

Thanks, that quinoa tortilla deal will definitely be repeated. Loved it!

I can’t believe you beat my Grizzlies!!! So sad. I guess we will let you win once 😀 I need to find that Clif bar flavor, yum! Love the St. Patty’s beard, haha! Have a great day!
Heather
Haha, thanks! And, yes… I guess we were overdue there on the court. 😉
Ashley @ A Lady Goes West
There’s been a bug going around here too! I caught it, but seem to be on the mend. And yes, I had plenty of greens yesterday! Happy WIAW 🙂
Heather
Boo, what the heck? Everyone around me is feeling a little off today. Hope you feel better soon!
Sarah @ Sarah's on the Run
Your lunch looks AWESOME! And I’m now on a mission to find white bean hummus!
I added some spinach to my veggies last night so that was my only green win for the day. 🙂
Heather
I know, I saw it for the first time this week at Meijer! Yum, love spinach 🙂

Mmm key lime….I ‘m a huge fan of citrus anything so of course that calls to me. Your hat is the winner. Happy Post St. Patrick’s Day.

Heather
Ridiculous, lol. Hope you had a great St. Patty’s Day!
Lauren @ The Bikini Experiment
Bars are always the perfect answer in a pinch right? Love the pic of you and Scott!
Heather
Always! Sometimes I crave granola bars and others it’s protein bars if I’m more on the hungry side. It’s not uncommon for me to have both in my purse 😉
Brit
Your lunch looks so good! Love your blog, Heather.
Heather
Thank you for reading, Brit! I hope you enjoy your Wednesday!

Pinterest is a black hole that takes a lot for me to escape from. I have to be very careful when I log onto that website, I get sucked in!
As I am reading this, I am actually quite hungry, and I think your lunch would hit the spot right now. I love feta cheese, and I want to incorporate into more of my meals! I tend to think of it as only on Greek salads, but it can be utilized in so many more ways!
I am sorry to hear you were feeling a bit groggy, and I hope that clears up very soon, Heather. On the bright side, the picture of you in this post… you cannot tell! You look like you are having a great time, and beautiful as always.
As for your question, I did not eat anything green yesterday. Whoops- it happens!
Bridget McGahen
I love how you shared real life — taco bell. Obviously not the healthiest choice, but even though you’re a fitness professional, you’re also a real person. And you’re totally allowed to splurge sometimes.
I’m thinking about starting to do WIAWs again.
bnwilliams500
If it’s any consolation for the time spent, your 5k graphic looks AWESOME. 🙂
I never realized that people link up for WIAW– I might have to check that out and start participating. My friend and I share Fun on a Budget Blog, and it might be a good way to show the budget haters that we still eat yummy food 😉
Heather
Ha, thank you!! Yes, WIAW has been a huge link up for a long time, you guys should definitely pop on over! 🙂
Jenny Bender
Sometimes you just have to Taco Bell. I’m a fan of their potato soft taco. 🙂 Once in a GREAT while!!
Heather
Absolutely! Ha. I’m usually not one who ever even craves it, but you’ve gotta do what you’ve gotta do!
