Good morning, friends!
We are officially half way through the week, and on Wednesdays, we talk about food.

What I Ate Wednesday Tuesday
I got around to breakfast a couple of hours after I woke up and immediately started working on the computer. I usually don’t wait that long to eat, but it was worth it.
Scott cut up the fruit haul in our fridge and made a big bowl of fruit salad. I poured some over a serving of plain Greek yogurt and went to town around 9:30 a.m.!

I dropped Scott off at work, then came back home and enforced a serious lock down at the computer throughout the morning. Before I knew it, it was time to get ready for work at the gym a few blinks later. Unlike a couple days ago, I made sure to get a substantial lunch before I left this time!

That held me over through a few appointments, but my appetite came right back on my break around 2:30 p.m. Snack time!

Yes, I dipped the almonds in the hummus, too. It was so good!
I worked on an article for the gym, planned a few workouts, and typed up my afternoon blog post with another snack on the side.
Coffee with leftover fruit salad
I’ve been really good at cutting out any additional coffee (after my morning cup) throughout my days lately, but I just… needed it. I was dragging!
I wrapped things up on the computer two hours later, and had just enough time to fit in my own workout before my next client. It was short and not-so sweet. I finished up my last appointment of the day around 6 p.m. and got out the door by 6:30 to drive over to Downtown Rochester for a dinner date!
I met a friend from our small group, Christine, for dinner at Rojo. It was Taco Tuesday, so of course I had to partake.

…. and basically an entire basket of unpictured corn chips…
We had a great chat and ended our night around 8 p.m. I was tempted to stop into the cupcake shop close by before heading home, but I didn’t. Instant regret.
Instead, we closed out our night by watching the NBA Playoffs. Or, Scott watched the Western Conference Finals while I caught up on more work on the computer. It’s fine.
I broke for home-popped popcorn around 11 and called it a night soon after.
Cheddar seasonings and all, yes sir.
It was a great little Tuesday!

That fruit salad looks so yummy! I’ve seasoned my own popcorn, but never popped on the stove… I feel like that would just take it to the next level. : )

My dad makes amazing popcorn at home, and I absolutely love it! I have never tried cheddar seasoning with it though!

I used to eat homemade popcorn all the time but our popcorn maker broke 🙁 I’ve never tried doing it just on the stove!

Mmm, those tacos look fantastic! I often forget about popcorn, but every time I remember to pop some, I love it. It’s the perfect salty snack!

I love homemade popcorn on the stove with coconut oil. I haven’t made it in forever though. My husband doesn’t like popcorn and I have a hard time making just one serving on the stove.

Tacos are one of my favorite foods! And I had to say that your fruit salad looks absolutely colorful and delicious. I love how God gives us the HUGE variety of fruit and veggies to enjoy… 🙂
