Hey, hey everybody! It’s Wednesday… and I’m officially back to my regular shenanigans here. Before we get to WIAW, I have a few things to address:

Now onto What I Ate Wednesday…
Since there are a lot of new folks popping in (HI + welcome!), WIAW is a series a fellow (and awesomely hilarious) food blogger named Jenn started quite a while ago. She blogs over at Peas and Crayons, and her site is filled with tons of yummy (and healthy!) meal ideas.
She started featuring these posts to show her readers what a day of eating looks like at her house, and now encourages anyone and everyone to join in and link up! Well all right, Jenn… here I go!
What I Ate Wednesday Tuesday
Breakfast started as soon as I woke up around 7 a.m. yesterday. I almost always wake up hungry. (Coffee is a no-brainer. I will always have a huge cup o’ joe in the mornings, sweetened with a little bit of Stevia in the Raw and Almond Milk, and it rarely gets pictured.)
In my bowl: 8 oz. Activia Light Strawberry Banana Activia Probiotic Yogurt topped with Bear Naked Fruit and Nut Granola, flax seeds, and fresh berries.
I kept busy for hours downstairs on the computer before I even noticed it was lunch time. Busy bee = snack free. <- not always a good thing, but tends to happen.
My goal for lunch was to empty out the vegetable drawer with a monster salad!
On my plate: a mix of organic romaine lettuce, spring mix and spinach, broccoli slaw, broccoli, cauliflower, red and green peppers, avocado, Monterey jack cheese, and sunflower seeds all drizzled in grapeseed oil + balsamic vinegar.
Ummm… yum. Andddd I am still just as obsessed with avocado as I was a few WIAW’s ago.
About an hour later, my tummy had a little extra room for something sweet. While I was out of town, I noticed Scott bought a bottle of Bolthouse Farms Green Goodness. I guess he totally missed the even bigger bottle of Blue Goodness I brought home first.
This made my snack of choice an easy one.
In my cup: two servings of Bolthouse Farms Blue Goodness, because one is never enough.
In hindsight, I probably should have poured between one and two servings because I was super full after that one!
Lunch and juice held me over until about 7 p.m. when I decided to go for a run. I would have been okay, but knew half a serving size bag of Blue Diamond Salt ‘n Vinegar almonds would give me a little extra energy.
Holy wow… is this flavor the shiz. I can’t even begin to describe how out-of-this-world, finger licking good they are. It literally tastes like you are eating Salt ‘n Vinegar chips, which is one of my favorite indulgences. (Don’t judge!)
I only had about thirty minutes, so I decided to take Roadie with me this time.
He loved his three miles and almost knocked my on my butt (again) after running full speed towards two different rabbits. I say again because it has happened before. He may not look that large, but he sure does pack a punch with his fifty pounds of muscle!
I finished the rest of the pack of almonds after my run, did the short CrossFit WOD I learned at FitBloggin’ (5 push ups, 7 sit ups, 9 air squats continuously for four minutes) before I downed an entire bottle of water. The salt from the almonds must have made me extra thirsty!
After a shower, I hurried downstairs to heat up the leftovers Scott mentioned he saved for me from dinner at Palm Palace the night before. Love when that happens.
On my plate: two cuts of lamb with a side of rice, sauteed peppers, onions, and cilantro.
It hit the spot and as I went back downstairs to answer some emails I grabbed a Skinny Cow Cookies ‘n Cream Ice Cream Sandwich.
If you haven’t tried one of these bad boys yet… whyyyyyyy? If you are free of dairy allergies, do yourself a favor and indulge. 150 calories for one ice cream sandwich = win.
