Take a break from the heavy holiday food with this healthy and delicious wrap! There’s no need for dressing or sauce with the addition of a good hummus spread, either. I hope you like hummus as much as I do because this line of fruit flavors is soooo yummy!
I’ve been focused on eating salad after salad lately, but that habit might turn into a new one after this wrap reminded me how great they can be.
Wraps can be just as healthy as salads with the right ingredients, and I love how quick and easy they are to make and eat!
I know we aren’t anywhere near the summer months right now, but with the carb-loaded foods that come along with the holidays, I try to balance it all out by creating meals that feature multiple fruits and vegetables all in one swoop. I had a craving for a summer salad the other day, so I decided to use that as an inspiration for a new go-to wrap that I will be making on the regular.
My favorite part of the flavors is the fruit hummus that brings them all together.
I’d never tried a fruit flavored hummus before, so I was looking forward to the opportunity to get creative with them when I signed on to test out a few from Lantana!
They have a pretty new line up in the fruit category including strawberry, mango, blueberry, and cherry, which is what I used for this recipe. I love that they are so versatile, and you can use them on a variety of things from breakfast items like waffles, pancakes, and toast to a side dip to enjoy at any meal.
The cherry didn’t taste as sweet as I expected it to, but that was totally okay. In fact, I think it helps the authentic hummus factor shine through!
If you’re not one to spend hours meal prepping on the weekends, a wrap like this would be a wonderful make-ahead option that you can piece together in under fifteen minutes. Enjoy!
Ingredients:
This recipe makes two full wraps.
(I like to make more than one at a time so my husband can have one or I can take the leftovers to work the next day. To make one wrap, simply cut the ingredients in half!)
4 cups spinach
6 strawberries, sliced
1/2 cup mandarin oranges
1/2 cup cucumbers, sliced and halved
1/4 cup dried cranberries
1/4 cup gorgonzola cheese
2 Tbsp sliced almonds
salt and pepper to taste
1 wrap of choice (I prefer whole wheat or spinach)
4 Tbsp hummus spread on a wrap (I used Lantana Cherry)
Directions:
- Slice strawberries, almonds, cucumbers, and measure out ingredients.
- Grab a large mixing bowl and combine spinach, strawberries, cucumber, oranges, cheese, and almonds.
- Gently toss everything together and set aside.
- Spread hummus onto the wrap.
- Pour ingredients in bowl onto the wrap, fold sides in, and roll tight.
