I can’t believe it has been nearly two months since I have posted a full recipe on the blog! I used to feature something new from our kitchen on a weekly basis, but I haven’t done that in quite some time.
Is that something you guys would like to see more of?
I have a feeling that once I obtain my certification and transition back into working a regular schedule, my meal planning will need to improve.
I have never considered myself to be a fabulous cook, but more of the hurry up and get something healthy-ish together type of meal preparer. I think that is pretty clear through my WIAW posts.
This week, a friend came up to me asking which HWG recipes she should try if she doesn’t have a lot of time or patience to cook in the evenings.
I figured she’s probably not the only one who would appreciate my response, so consider this the first of many Recipe Recaps to come!
A small collection of some of my favorites…
• Healthy Chicken Macaroni Salad
A lighter (and tastier, if you ask me) alternative to chicken salad!
I need to make it again soon.
A spicy at-home version of Chipotle.
• Pulled BBQ Chicken Sandwiches
Okay, this one takes 35 minutes total… but it’s too easy not to include!
Light, fresh and easy green pasta!
Perfect for lunch, dinner, and anytime you are craving pizza!
This one tastes better than it looks, promise.
• Skinny Tex-Mex Macaroni and Cheese
One of my go-to ways to “do” mac ‘n cheese. This recipe has a spicy kick!
• Light + Healthy Vegetable Pasta Salad
Meant to be a side, but has been served as the main dish in our household several times.
• Easy Cream of Mushroom Chicken
I need to re-make this to photograph it better.
Even so, this is one of my biggest page hits to date!
Pretty similar to the Skinny Tex-Mex Macaroni, only easier (if that’s possible) and not as spicy.

Yeah, I think it’s time to get the creative cooking juices flowing in the kitchen again. Soon, my friends.
I plan on spending the remainder of my day glued to my books before my training run. I’m taking my CPT test in 5 days, ya’ll!
If you need me, I’ll be re-watching content videos and coloring in muscles in my anatomy book until the Pistons Pre-Season game tonight.

More recipes would be great! I am similar too in that a lot of my meals are not “recipes” per se, but items I throw together. Love the “Chipotle” salad – I make a similar salad for dinner quite frequently. Have a good Thursday!
Lots of yummy stuff here! I rarely make a dinner that takes longer than 30 minutes during the weeknights these days. I save the more complicated stuff for an occasional weekend meal. My Crock Pot is my best friend! Pinning this to use for later. Thanks for sharing!
I can definitely see myself making some of these in my dorm room! Great for those days that “mealtime” just doesn’t seem to appear. Everything looks delicious! 🙂
One of my favorite go-to easy and quick dinners is sweet potato nachos (or you could use potato nachos). I found it a long time ago on the Slim Sanity blog–definitely look it up sometime! It’s delicious.
