Hey, hey friends and a Happy Saturday to ya!
I hope your weekend is starting off on a good note. Mine began with Scott yelling, “it’s snowwwing!” upstairs at me when he let Roadie out this morning. Oh man. Are we really already into snow here? For the love of fall, please hold on just a little longer!

Today’s post is going to be super quick, but I wanted to share how effortless it can be to spice up repeat recipes or easy meals. Leftovers can make your life so much easier, and maybe even a little healthier too!
If you aren’t a fan of pumpkin you need to try it again, then I have to apologize here. I am quite fond of it and have been centering my breakfasts around this ingredient for the past couple of weeks.
I really can’t get enough and don’t see myself getting sick of it any time soon. This morning I made another batch of pumpkin oatmeal, but this time the addition of one little ingredient made a world of difference. Can you guess what it is?
While this (ridiculously) easy recipe was great on it’s own, the memory of Thursday’s pumpkin protein pancakes urged me to add a generous spoonful of almond butter on top. Warmed up and mixed into the oatmeal, every bite was like a dream. I highly, highly recommend you try this at least once. On oatmeal, on a pancake, or even on cereal… almond butter is one of those things that just makes everything better.
Lunch also came together quickly today. Using the very last of my butternut squash, black bean and quinoa stash in the refrigerator, I heated the mixture up in the microwave and then threw a few more ingredients in to spice it up.
It probably sounds less than delightful to most of you, but I’m telling you… the addition of spinach and green olives tasted awesome! You just never know what will taste good together until you try it. Would this be a good time to throw in a #strangebutgood I’ve been seeing float around in the foodie blog world? Cool. Because I just did.
Welp, as much as I would love to stay and chat I need to get in the shower and get ready for a dancer appearance this afternoon. It’s at a Halloween store and miiiight involve getting to dress up and giving out candy.
Don’t worry, I’m going to try my best to resist my incessant candy cravings.
