Good Morning! Hope you all had a fabulous weekend. Ours was pretty great considering it started in Florida and ended in Michigan!
As most of you probably read on Friday, Scott and I spent a little over a week down in the sunshine state and spent the majority of our trip at camp with students in Lakeland. It was a blast!
When we got back to Orlando, we joined Scott’s sister and her family for a day at Disney and then the following day with my family. Since we had to head over to the airport Saturday afternoon, our summer trip came to an end within what felt like a blink of an eye.
Like most trips home come to be, this one absolutely flew by and we tried to fit in as much as we could while we were there. After a week of summer camp and a looong night at Disney, Scott and I were pooped and decided to keep our plans for Friday low-key.
Both sleep deprived, we took advantage of being on vacation and slept in until 11 a.m. We both felt like teenagers again and it was glorious!
I threw together a quick and small “breakfast” of yogurt and granola which held us over for a while, but the real star of the show happened a few hours later on a trip to Publix for lunch.
Yup… Publix subs! I’m still obsessed and miss them on a weekly basis.
I thoroughly enjoyed my five minutes of turkey sub heaven and spent the rest of the day with my mom. We had plans to get pedicures at my favorite nail salon that our neighbor just so happens to own.
She opened a new location just a few months ago, so we made appointments to check it out together. Hello paradise!
On the way back to our house, we stopped by a friend of mine’s and it was so great to catch up even for an hour or so.
With all of us being on the same page, we kept plans for the night at a minimum and ordered 4 Rivers take out for dinner and stayed in to watch The Lego Movie. (<- Scott’s choice. Ha! No but really…)
We both ended up falling asleep before even hitting the half way mark, but that was just because we were still tired from the camp activities. The movie was actually very entertaining, and had jokes built in for both children and adults. Maybe we’ll stumble upon watching it again down the road.
Saturday
Saturday started with a breakfast date with a handful of friends we used to work with! I didn’t snap a photo since it was early and we were all downing coffee to wake up, but we had a wonderful time catching up with life and enjoyed a lot of laughs in the process.
From there, Scott and I drove around town and eventually ended up at Yellow Dog Eats for lunch.
Ahh! Yellow Dog is the BEST! I’ve written about it several times on the blog and can’t recommend the quirky restaurant enough to anyone who doesn’t mind the little bit of a drive to get to it in Gotha.
Since we were still considerably full from breakfast, we decided to split an entree, which – if you have ever dined here you know – wasn’t an easy thing to do. We went out of the norm and ordered the Hokey Poké Tacos.
Three 6” flour tortillas layered with guava cream cheese spread, scallions, red onions, cucumber, sprouts and Poke Tuna piled into the tortilla then drizzled with Fish’s Poke Sauce.
I must have skimmed the description super quick because the tuna came as a complete surprise to me. Whoops! I’m not usually a fan, but have to say that in this combo it was tolerable, if not delightful.
We also had some great company!
(Don’t mind my awkward belly grab on Scott and less than freshly styled hair. Summer vacation at it’s finest, folks.)
While in town, I was able to sneak away from camp for a day and attend Missy’s Baby Shower. I have known her since I was three years old, and always hop at the chance to meet up with her and her husband, Billy, when we’re in town.
As soon as we wrapped up lunch, we dropped our rental car off and shuttled over to the airport. It all went by way too fast!
We didn’t arrive home until about 10:30 p.m. Saturday, but were instantly greeted with lots of snuggles by all three fur babies. I certainly missed them while we were gone!
Sunday
Scott and I were unusually early for church yesterday, so we drove through McDonald’s for two Fruit & Maple oatmeals. Both being early for church and McDonald’s almost never happens.
We ran some errands on the way home, and stopped in to change and grab a quick bite for lunch. Another Amy’s bowl for the win!
It was just enough to hold me over through grocery shopping at our new favorite marketplace.
More exotic fruits! (Only some of these gave me the heebie jeebies.)
We did pick one new-to-us piece up to try this week, so I’ll be sure to report back on how that goes.
We returned home with just enough time for me to take Roadie out on a run on the trails before it started raining again.
I think both of us loved being back out there after a few week’s hiatus.
Instead of our normal four mile loop, we shortened it to three so I could change my shorts into capris, grab Scott, and head to Hot Vinyasa Yoga at our gym. For not technically being a “yoga studio” I am thoroughly impressed by the heated room dedicated to yoga practice!
It had been a good while since I attended a hot yoga class, and it was just what I needed after a long week of sleeping on a cot, flying, and running without stretching at night.
I particularly love power yoga classes, because my arms always end up shaking by the end and I feel like I am getting a killer workout. Throw heated into the mix and you get a girl with a shirt and pants completely saturated with sweat on your hands.
Straight to the showers I went.
By the time we got home, I was more than ready for dinner and wanted twenty glasses of water.While throwing together a monster salad, I kept a portion of the cucumber slices to infuse in water and also added most of a sliced lemon. Yum!
You have to try this. It’s so unbelievably refreshing!
Spinach, cucumbers, orange and red peppers, black olives, feta cheese, ground pepper, and rotisserie turkey drizzled in balsamic vinegar.
It definitely hit the spot, but didn’t satisfy my hunger as much as I anticipated. While sneaking in a few episodes of Scandal, we popped some popcorn, ate fruit and even some gelato.
I also snuck in some extra snuggles with a dog who could apparently double as a canine pretzel.
Seriously… who sits like that? This guy.

Vacations always go by way too fast! That’s how I felt about ours just a few weeks ago. Why can’t we be kids again and have months of summer vacation?!? 🙂 I’ve never tried hot yoga but have always wanted to. It’s supposed to get up to 95 today, so I could just go do a few downward dogs and sun salutations in my front yard 😉

Love the Orlando pictures! I do enjoy hot yoga for sure, especially power yoga, which moves quickly from pose to pose. However, I’m not a big fan of actual Bikram Yoga, which is the super hot room when the class spans 90 minutes. That one is just a little too intense for me. I’ve done it three times in my life and each time told myself during it “never again!”

I’m with you… 90 minutes is hard for me to get through too! I love it, but start wondering when it will end about half way through. One hour seems to be the perfect time for me!

Bahama Nails! They have two locations in Altamonte Springs and Maitland relatively close to each other. I sure do miss it!
