Hi friends! I hope you’re having a great week so far.
It’s Hump Day, and yesterday I realized that is has been ages since I covered a What I Ate Wednesday. In fact, it’s been seven months. (What?!) I know. Time flies.
Do you want to hear something funny? The last WIAW post I shared was the day I was packing for our trip to New York City. At the time, we had no idea that we would be legitimately be moving here. We thought that it would be a neat dream to pursue, but, neither Scott nor I thought that it would actually happen.
That trip was our first time visiting Brooklyn, and it feels nostalgic to look back at that post and read about my first impression of Park Slope. It still amazes me that not only did we end up living in Brooklyn, but somehow we found a way to land a great apartment in one of the best family-friendly neighborhoods in NYC. God is good.
Anyways, reeling back into today’s topic, we are talking eats! Longtime LIL readers should remember these type of posts, because I used to share an entire day of unfiltered eats on the regular. Here’s why.
After noting a request to bring them back from a handful of you, here we are!
Right now my days are pretty busy. I’m working full-time and trying to soak in opportunities that come up in the City while keeping this blog up. I’m not complaining, though. It feels nice to have to be places and take on new responsibilities. I occasionally work seven days a week, so hopefully my weekends slow down a bit in the future. Other than that, everything is going really well!
Anddd that was officially the longest introduction to a post that I’ve ever written.

What I Ate Wednesday Tuesday
(Here’s a glimpse into my Tuesday eats and activities)
Each morning’s start time is different for me, and yesterday’s started later than normal with a 7:15 a.m. alarm. Scott’s been working in Paris for a week (and gets home tonight – yay!), so I’ve been taking Roadie on his last twenty-something walks. Let’s just say that we’ll both be glad to see him walk through the door later.
I didn’t have much time for breakfast before I had to get out the door, so I threw together a yogurt bowl with whatever I could find in a hurry.

Since my last job interview (with a different company) was about an hour train ride away from our apartment, I feel extremely grateful that I’m about a twenty minute walk to work. Yes, walk. If the weather is nice, that commute is actually my favorite part of the day.
I put on a podcast and sip on my coffee on the way over, then usually catch up with a phone call on my walk home.
Right now I spend most of my days at a construction site. The studio is coming together day-by-day, and when it makes sense I am working on-site and getting out in the community as much as possible.
I packed a few Aussie Bites for the day and snacked on them whenever I got a few minutes to myself in the morning and afternoon.
I don’t have access to a refrigerator, so I can’t bring too many lunches with me right now. (I started bringing sandwiches every day, but a girl needs a break!) Luckily, there are plenty of lunch spots around, and my favorite mid-day spot lately has been Starbucks.
Thai- Style Peanut Chicken Wrap and Jade Citrus Mint Hot Tea
It’s faster and cheaper than sitting down in a restaurant, and I’ve really been enjoying my afternoon hot teas!
I worked through the early evening and walked in the door to take Roadie for a walk around 6 p.m. He had the biggest smile and (for those who have asked) has adapted to City living considerably well.
Ready for dinner, but not ready to cook it yet, I nibbled on a generous handful of carrots dipped in Sabra Chipotle hummus (<- yum). I also might have had a handful of corn tortilla chips.
I knew I needed to get my workout in then or never, so I turned to an old favorite and completed two rounds of this at-home dumbbell workout.
I took a shower and got in some comfortables afterwards. Isn’t cooking always better in pjs?
My once-a-month Blue Apron Delivery came over the weekend, so I chose to make a meal that I was excited about ever since I saw it as a recipe option.
Shrimp & Two-Grits with Sautéed Summer Vegetables
It was delicious! The Southerner in me was on Cloud 9 with this fancy shrimp & grits dish, and I have plenty left to share with Scott for dinner tonight, too. #win
I spent the rest of my night catching up on Teen Mom OG (do any of you watch this show? I’m a weirdo and have been hooked since 16 and Pregnant debuted so many years ago) while typing up this blog post, and I ended my night with a tall glass of almond milk before bed.

I’m soaking up the last of my bag of Pumpkin Spice coffee that my mom sent up from The Fresh Market. Other than my daily cup in the morning, I am starting to dive into pumpkin and apple flavored yogurts, butters, and treats. Yum!

I am so jealous of your 20 minute walk to work! I have a 40 minute drive, so the idea of being able to walk or bike sounds so amazing to me.
I haven’t gotten into the fall food/drinks yet, but it STILL feels like summer down here. As much as I love summer, I’m ready for it to cool down a bit!
