Good morning, and Happy Hump Day! I have been slacking in the WIAW department over the past couple of weeks, so I think it’s time to get back to it with a fresh edition of What I Ate Wednesday today.

What I Ate Wednesday Tuesday
Yesterday started with a hearty breakfast filled with some of my favorite things.
Van’s Apple Cinnamon gluten-free waffles topped in Raspberry Greek yogurt & blueberries
Oh, those waffles are good. If you haven’t ever given the Apple Cinnamon flavor from Van’s a try (gluten free and all), you’re truly missing out.
Yum!
Two of those topped in Greek yogurt always does a great job of keeping me full until lunch, unless I’m unusually active afterwards. Since no workouts were in sight for the day (I deemed it an unofficial rest day), I spent the next several hours plugging away on the computer and taking care of updates on the back-end.
I eventually took a break around 1 p.m. and grabbed a bottle of Kombucha, thanks to my friend, Hannah, who re-introduced it to me.

I really tasted the ginger in this flavor, and even though I’m not a fan, I still enjoyed the beverage knowing I was getting an instant surge of nutrients.
I quickly went back to work and broke again for a late lunch right before 2. I only had a few minutes to throw something substantial together, so I turned to the freezer with hope of inspiration. Good news… I found it in the organics line from Kroger!

I browsed around online while I ate, then layered up in order to get to the gym for a 1-on-1 training appointment.
Fifteen minutes later…
(thanks to the frozen layer of snow attached to my car)
I was on my way.
If the season of spring came tomorrow, I swear it wouldn’t be soon enough. I’m all for the nostalgia of cold and snow around the holidays, but we are officially in March now. I’m over it.
My session at the gym went really well! I’m loving my job and finally feel like I am getting in the swing of things. I left around 5 p.m. and set out to run a handful of errands after that.
I forgot to bring a snack with me, however, which was a complete fail. I was definitely hungry and ready for food while I was shopping for groceries… and that’s never a good idea.
For all of my Southern (or others who don’t have to deal with winter snowfall), this is what you are missing. My cart got stuck at least four different times on the way to my car… even though the roads (and parking lot) were plowed.
Good times.
As soon as I walked in the door and unloaded groceries, I instantly wanted dinner. While I was trying to figure out what to prepare, I noshed on a sliced green pepper dipped in a new (possibly new-to-me?) flavor of hummus. It was fantastic!

Just like lunch, I needed something quick and healthy to throw together for dinner. I remembered that I needed to use up a package of chicken sausage, so I sliced and sautéed two of them as the base to an easy-to-assemble meal.

I picked up a variety of packaged steam-able vegetables including the green beans and sweet potato cubes you see above from my trip to Target earlier that day. They definitely came in handy, and the sweet potatoes tasted extra delicious with a little bit of butter and cinnamon sprinkled on top.
I felt very content throughout the rest of the night, but the natural snacker inside of me came out an hour or so later. I grabbed a few generous handfuls of corn tortilla chips and dipped them in that tasty hummus you see pictured above. It was a great substitute for dessert!
I left to go pick up Scott from the airport around 10:45 p.m. and may or may not have also grabbed a couple of Shortbread Girl Scout Cookies upon our arrival back home.
You’ve gotta (hate to) love Girl Scout season!

I feel like a lot of my WIAW posts look similar! I often fall into the same eating habits. Whatever works, right?
Oh man, grocery shopping while hungry is the WORST. I make terrible decisions when that happens. Last time I was hungry shopping I came home with pop tarts and doritos. Never again.
Haha, that sounds similar to my weaknesses! I was about two seconds away from taking and eating the jumbo Salt ‘n Vinegar chips staring at me. Ha!

I would say the healthiest thing I did yesterday was eat several servings of vegetables! I find it incredibly tough to get much here at college, since they are so much more expensive than everything else (oh dining halls…). But yesterday I was eating them all day long!

Wow, I can’t believe the mass amounts of snow you’re still dealing with over here. The only thing close to it we had in weeks was some surprise hail a few days ago.
I wish we had those waffles over here because your breakfast looks fantastic. And one of the most delicious dishes I ate yesterday was my lunch of: Butternut Squash Eggplant Lasagna. My first time trying the recipe and I had to have it again today because it was so good.
Let’s just say I’m ready for summer. Like, yesterday 😉 Surprise hail is no joke though! Butternut squash eggplant lasagna sounds amazing!
I feel you on this horrible snow. I’m so thankful to be living in NYC where we don’t get hit as bad or it at least gets scooped up immediately on the sidewalks into mountains.
I need some waffles in my life. Those look really good topped with the yogurt.

Ugh yes, pushing shopping carts in the snow is awful. I’m always waiting for a video to pop up of me in the parking lot battling the elements haha.
