Hi there! I have a new workout planned to publish next Wednesday, but today I wanted to circle back and share a full day of eats in a What I Ate Wednesday style.
It always surprises me to hear that most of you love seeing these types of posts, because I would never consider myself a great cook and usually throw meals together at the last minute. The key to keeping things simple and healthier, however, is getting a good base of groceries that help you create meals in a quick and easy way.
Here’s a look into this past Monday, a day where I was off from work, but kept busy at home with Skyler. I tend to spend a little more time putting meals together on days when I’m at home (although I don’t always cook recipes), so I’ll try to highlight a work day next time to show how I prepare meals for work that are still nutritious and easy.
Here we go!
My day started with Skyler waking up around 6:30 a.m. and asking for milk as soon as we got up and moving. This is when I fed the animals, made coffee, hung out with Skyler, and got everyone dressed and ready for the day before breakfast at 8 a.m.
I’m in an oatmeal phase, thanks to the toppings that make it so delicious.
I could have made something a little more out-of-the-norm since I pack this breakfast with me to eat at work a lot, but I wanted to highlight it here because I definitely think you should try it. Also, go ahead and mix it around so the chocolate melts and spreads the flavor. There you go!
I cleaned a little and checked emails before heading to the gym in the late-morning. Skyler loves going to the gym daycare, so I’ve been making longer appointments which gives him time to enjoy playing with other kids and me the opportunity to take my time with workouts. It’s been so nice.
Somedays I don’t feel like running, but this day I did. I completed a 5K on the treadmill and followed it with a good strength training workout. You can find the details here.
I was running out of time, so I ended up doing two sets of each circuit (after the first one) and skipped the jump ropes at the end. I got plenty of cardio through running!
(By the way, would you like to start seeing workout round-ups appear on the blog again? I’m thinking about bringing those back about once a month, too. Let me know.)
I normally have some type of protein drink after a workout, but I skipped it and just went ahead and made lunch instead. Skyler had leftovers from the day before, and I put a big salad together while I snacked on a side of grapes.
Skyler was tired and ready for a nap after lunch, so I took advantage of that hour by cleaning the apartment and organizing. I usually take that limited time to myself to write here on the blog, but I opted for feeling more put together to sit and focus when it was time to write later. Sometimes that works out better for me so I can stay on task without looking around and getting distracted.
The afternoon rolled into playtime with Skyler and more cleaning. Our apartment really needed it, if you couldn’t pick that up. Ha. Not pictured during the day was a few generous handfuls of Puffins cereal that Skyler snacked on. It’s almost impossible to resist those, am I right?
I added in a couple of cuties for good measure.
We took Roadie for a late afternoon walk, and then it was time for dinner. Scott was working late, so I kept things simple by heating up leftover tacos from the night before.
I also added a good drizzle of salsa to the top! I never have good luck with taco shells staying together, so I called it a wash and made them tostadas by breaking the shells in half. They were like little pizza slices, if you will.
Skyler loved his little taco bowl that I made him (without the taco shell), so I’d call it a win all around.
Without breaking down my day too much further, we kept busy until bath, books, and bedtime. I spent about an hour catching up on some work on the computer and then the rest of the night catching up with Scott after he got home. I pulled my normal bedtime move with a tall glass of almond milk with just enough sweet on the side to finish it all off.
It wasn’t long before I needed to turn in to get rest to prepare for a 4 a.m. alarm the next morning, and speaking of that early alarm, I’ve got another one to get to tomorrow.

You are a health-conscious nice lady. I am impressed with your gym workout, It’s a perfect routine, at the end of your workout you are doing 100 jump ropes which is cover your body high-intensity exercise. By the way how much time you need to complete your total 13 items of workout? Greetings for your kid Skyler, playing a lot at the time being you working out.
I am a huge coffee lover and drinker so, I also liked your other habit that you used to take your coffee with steamed almond milk. Drinking coffee regularly have lots of benefits and it boosts your body immunity. By the way which coffee machine you are using in your kitchen?
