Hello, friends and Happy Hump Day! Are you running around like a maniac trying to fit in everything in before the holidays too?
Coming off of a packed game week and looking forward to another two games and extra halftime performances in a row this weekend, I feel like my head might actually explode. So much to do!
So, to keep it short and allow myself enough time to get onto today’s to-do’s, I’m going to zip right into this week’s WIAW.
(For those of you who are new around here and are wondering “what exactly that random W acronym” means, this should fill you in!) Let’s roll…
What I Ate Wednesday Tuesday
Flashing back to yesterday, here is a full list of what I ate on a day spent at home working on the computer then out during and after a halftime rehearsal.
Breakfast was ready as soon as my coffee was, thanks to these overnight oats. I am so grateful for this easy pre-made breakfast fix I put together at least once a week. <- Thanks again for breaking it down, Julie!
(Key Lime Greek Yogurt, organic skim milk, rolled oats, chia seeds – refrigerated overnight – topped with banana slices in the morning.)
That held me over for several hours until I realized it was lunch time. I was so focused and into the typing zone, however, that I settled on a plateful of pretzels dipped into almond butter as a snack to hold me over a little longer.
(I swear it’s tastier than it looks… ha.)
Another hour later I made the easiest green smoothie ever for lunch.
(I said easiest, not prettiest.)
This time I went with a generous handful of fresh strawberries, a banana, two cups baby spinach, a scoop of whey protein powder, and enough orange juice to make it all blend together.
Eventually, I wrapped things up on the computer with just enough time to get ready for practice, take Roadie for a walk and heat something up for dinner around 5 p.m. Would it surprise you to find out I chose a frozen rice and vegetables bowl from Amy’s again?
(Absolutely not.)
This one had tofu mixed into it which I really enjoyed. Scott hates the concept and texture of it, so I never really cook much with it. Yay for easy grab and go tofu dinners!
I ran out the door arrived late to practice, thanks to a little thing called snow. I swear, it’s like driving on another planet. Everyone (including myself) freaks out, goes so incredibly slow and it ends up taking at least three times the amount of time to get somewhere.
We ended up learning a Janet Jackson themed halftime we are performing at the game Friday. We also have a game Saturday and another halftime to learn tonight. I guess that’s one of the reasons you could say my mind is all over the place lately. Sorry in advance for that.
It will all come together though. It always does!
A few hours into practice you’d think I didn’t eat anything all day. I was so hungry and settled my raging appetite with a Clif Crunch Granola Bar.
Have you tried these before? They remind me of those Nature’s Valley granola bars that get everywhere and make the biggest mess once you open the package. (Am I right?) I liked the chocolate chip flavor and appreciate that they aren’t all that bad for you.
We ended right around 10 p.m. and while I knew I should have gone home to eat, I joined a few friends across the street for dinner at Ciccarelli’s.
We ordered chips and a spinach artichoke dip to split as an appetizer (not pictured) and I ordered the Chicken Pesto Salad which was really, really good.
I can’t remember the exact ingredients, but it had something similar to mixed greens, grilled chicken in a pesto sauce, red onions, goat cheese crumbles, toasted almonds and croutons with a balsamic vinaigrette dressing on the side.
I got home a little after 11 p.m. with these staring at me too.
I couldn’t resist and it just goes to show another reason why Scott is sneaky and fills our home with sweets while I’m away. 😉
And there it is. Off to a full day of holiday shopping and hopefully shipping, then practice. I’m looking forward to catching up more tomorrow.

I’ve never had tofu before….the concept kind of freaks me out too. That pesto salad, on the other hand, looks divine… 🙂

That looks like a great day of food to me! I find sometimes the tastiest things are often the least photogenic, though I think your smoothie looks great!
