Hi there! Today I am jumping right into the eats for What I Ate Wednesday. Per usual, I go through an entire day of my meals and snacks on any given Tuesday to share with you on Wednesday.
The point is to show you that eating a (mostly) balanced diet isn’t something you have to do a ton of meal prepping and planning on the weekends for. I have never been one who puts too much thought into what I will be eating the following week, so I hope these posts help those of you who are similar in that regard.
This week, however, my appetite has grown into something serious. When this happens, I’m not sure if working at home is a blessing or a curse. I can’t get out of the kitchen!
Here’s what my plates looked like yesterday…
What I Ate Wednesday Tuesday
Breakfast was enjoyed at Starbucks following an early morning barre class!
Grande (non-fat, no whip) chai tea latte + spinach and feta egg wrap.
I stuck around the coffee shop for a few hours, took Roadie for a semi-long walk when I got home, then grabbed a peach for a mid-morning snack.
I was getting hungry for lunch right before noon, so I searched our pantry for something easy. I found a can of Amy’s No Chicken Noodle Soup and made it a little more traditional by adding my own rotisserie chicken to it.
It was good!
My appetite started flaring up again about an hour later, so I searched around the refrigerator and came up with a super random (but yummy) snack plate.
Hard boiled eggs, low-fat cottage cheese, and dill pickle spears.
That, along with a handful of pumpkin seeds an hour or so later, held me over through the afternoon.
I started closing down the computer around 5:30 p.m., but then got word that Scott wouldn’t be home for at least another hour. Knowing this gave me a craving for cereal, so I poured myself a bowl to tie me over.
Quaker Oat Squares cereal with organic skim milk + fresh blueberries.
My appetite is seriously snack-y this week!
About an hour and a half later, dinner was served. Attempting to use up everything that was about to spoil in our refrigerator, I settled on starting with a side salad…
Spinach, spring mix, cucumbers, tomatoes, carrots, black olives, shredded cheddar cheese, and ground pepper with a raspberry vinaigrette dressing.
… and finishing with a health(ier) loaded baked potato.
Baked potato topped in shredded cheddar cheese, ground turkey, corn, and turkey bacon.
I only ended up eating half of it. I guess the bowl of cereal beforehand really did me in!
I was going to skip dessert all together last night, but that was before Scott made us a couple of Ghirardelli hot chocolates with marshmallows. I mean, how can you really say no to that?
I grabbed the baby one in the back and called it a night.

And that does it for this week’s edition of WIAW! I am looking forward to an afternoon training run (and taking advantage of this beautiful weather while it’s here!) and plan to keep studying my face off before something (possibly) exciting tonight.
How vague am I? Ha! Sorry. I don’t want to get my hopes up, but Scott might be able to get us a couple of last minute tickets to a concert I am dying to get to. That’s all I’m going to say for now…

Call me crazy, but I have been getting up earlier too and I have noticed my appetite is out of control. I am so much hungrier than normal. I have wondered if it is because my body is adjusting.
Good thought on the hard boiled eggs! I am going to make some later to have on hand for a quick snack. 🙂
That’s probably a big factor in why I was so hungry yesterday. Ha! Yes, I love having HB eggs on hand when I’m in a pinch and in need of a healthy, somewhat filling snack in a hurry!
I hope you get tickets for the concert tonight! I get hungrier when I am up and moving early in the morning as opposed to taking my time getting ready.

If I could I would snack all day. I love food.

I usually am a three meal girl with an afternoon snack. But lately I have been so much more hungry. When I get home from work I immediately need to eat something. I am lucky (relatively ha) because I have a desk job (away from my kitchen) and can control how much I eat by what I bring in. I think my random hangry spells are coming from my HIIT workouts first thing in the morning.
I’m telling you… working from home isn’t always a good thing with distractions and FOOD! All the food. Always. 😉
That’s my kind of day! I’m a big snacker 🙂 I feel like I get cranky if I go too long without eating, so I love mini meals!
Oh, you don’t want to be around me if I’m hungry, lol. 😉
I haven’t had pumpkin seeds in months! I need them!

Ahhh Snacking is totally my thing, I often times don’t like to commit if you will to one meal and instead like to have a little bit of a lot of things… ha. Also Spinach and feta wraps are amazing!
Ha, I do that at restaurants sometimes by ordering a few appetizers when I can’t decide on a meal!
I’m totally a snacker. I would prefer to eat random small meals all day!!

I always have snacks between my meals! I eat breakfast early and dinner late, so I have to fill the day in with little meals other than lunch. Happy Wednesday!

I have convinced myself that snacking is good! Don’t they say that it is best to eat more smaller meals and more variety of foods a day? Well that is called snacking! Ha!

It is good! I’m all for it. It just makes me laugh on the days I seem to snack allll day looooong. Ha!

I’m such a snacker! I would much rather graze all day long than eat full meals. I like a little bit of this, a little bit of that… which I also why I love the Whole Foods salad bar! 😉
I too would rather snack all day long. I think it’s because I love eating a variety of things and snacking lets me sample a bunch of different flavours!
some weeks im SUPER hungry and nothing satisfies me! usually before that time of the month 🙂 mmm a bow of cereal is just the best!!
Sleep really determines my hunger levels for the day! I’m always super snacky in the afternoons! You’re dinner looks pretty damn epic.
Ha, thank you!! And yes, if I’m tired I tend to snack more to keep me awake when I need to concentrate on something. Whoops!
